Lechon Asado

- 1/4 C finely chopped onion shopping list
- 6 garlic cloves, minced shopping list
- 1/3 C orange juice shopping list
- 3 Tbl lime juice shopping list
- 1 Tbl EVOO shopping list
- 1 tsp dried oregano shopping list
- 1 tsp ground cumin shopping list
- 1/4 tsp red pepper flakes ( or to taste) shopping list
- 1 (2 lb.) boneless, center cut pork loin roast, trimmed shopping list
- 1 tsp salt shopping list
- 1/4 tsp black pepper shopping list
- 2 C carrots, cut into chunks shopping list
How to make it
- Mix first 8 ingredients in a large feezer bag
- Add pork roast and marinate a minimum of 3 hours
- Preheat oven to 425
- Place roast on rack (sprayed with non-stick spray) in a large roasting pan
- Place roast on rack and discard marinade
- Sprinkle with salt and pepper
- Spray the carrots with olive oil cooking spray and scatter arounf the roast in the pan
- Roast until meat registers 160 on a thermometer and until carrots are tender, about 40 minutes
- Remove roast to cutting board and let stand 10 mintues
- Cut into 16 slices and serve with carrots
