Ingredients
  • 1/2 cup fresh espresso
  • 2 1/2 cups low fat milk (2 percent)
  • 1/4 cup granulated sugar
  • 1 tablespoon dry pectin

Directions
  1. Combine all of the ingredients in a pitcher or covered container. Stir or shakeuntil sugar is dissolved. Chill and serve cold.
  2. Makes 24 ounces.
  3. To make the "Mocha" variety:
  4. Add a pinch (1/16 teaspoon) of cocoa powder to the mixture before combining.
  5. To make espresso with a drip coffee maker and standard grind of coffee:
  6. Use 1/3 cup ground coffee and 1 cup of water.
  7. Brew once then run coffee through machine again, same grounds.
  8. Makes about 1/2 cup fresh espresso to use in the above recipe

Thanks for the tip about making espresso with a drip coffee maker. I hate espresso powder, but an espresso machine just isn't an option right now.


But it's the dry pectin
that gives it the taste we crave....
