This dish is fabulous! It has become a favorite in our house. Incredible quick and easy and is some kinda' good! Trying to eat heathier with more fish in our diet, this one hits the spot!

Ingredients
  • 4 salmon fillets (I use one large fillet and split it between me and my beautiful wife)
  • Sauce:
  • 1/4 cup soy sauce
  • 1/4 cup mirin - Japanese cooking sake ( I get this at Sprouts, our local heath food store)
  • 1/4 cup water
  • 1/4 cup white sugar
  • 1 inch grated ginger
  • Thinly sliced green onions for garnish

Directions
  1. Put sauce ingredients in nonstick skillet and heat until the sugar has dissolved
  2. Add salmon to pan (skin-side down, if there is skin)
  3. Cover and turn heat to low - cook 5 minutes
  4. Turn fish over and cover - cook an additional 5 minutes
  5. Serve over rice ( I like Jasmine rice myself) with green onions on top
  6. First thing I do is start the rice and it cooks while I prepare the Salmon.
  7. 15 minutes start to finish and you have a wonderful meal. You can't beat a supper like that!
