How to make it

  • Grandma was notoriously brief in her instructions.
  • She did not give me a pan size, loaf or cake.
  • This is a war time recipe and I can't imagine it making a very large cake.
  • I'll admit I haven't made it. I was posting for those with more baking experience to comment and give me guidance on the cake with flushed out instructions.

I associate "sponge cakes" with jellyroll pans.

    Mine is 17 X 11 X 1 inches.

Let you know how it turns out.

trish ps thanks for sharing your Grandma's recipe.

I thought a "sponge cake" is the cake baked for a jellyroll. and jellyroll pans are large rectangles 15 inches or 17 inches and 1 1/2 inches high.

I'm gonna go try right now!! "cinnamon" is the hook!! and no fat.

I whisked together the egg, sugar and molasses and added the dry ingredients. Sprayed an 8x8 pan with cooking spray and lightly coated with granulated sugar. Then I baked it at 350F checking it after 20 minutes(my oven cooks fast) I should have pulled it then 'cause the edges got hard. It is delicious!! My 15 month grandson loves it. Really good with vanilla ice cream. You get my five! P.S. Kinda like a brownie.

I'll try this in a loaf pan. I like that there's molasses in the recipe and bet it tastes lovely! Sounds like a really nice cake to have with an afternoon cup of tea or coffee. Thanks so much for sharing the recipe!

Be Interesting to try this just to see how it turns out. My grandmother use to make a small cake when things were 'Tight' around our house and it sounds somewhat like this. She did use a round cake pan.I will make this in the morning and get back to ya.

This probably makes a 9" round or square pan given the temp and baking time with the ingredient ratio... all I can say is to try it with one of those and test frequently for doneness.

Seems to me it would be mixed as a standard cake recipe. Beating the eggs & sugar until creamy then adding the other ingredients until blended. Thanks for posting. I would need some molasses to try this. I'll let you know when I do.
