Quick and Easy Alfredo Sauce "DOUBLE FOR THIS RECIPE"
4oz LF cream cheese
4oz FF cream cheese
2t garlic powder
1t onion powder
2c milk ( I use 1%)
3/4c grated LF Parmesan cheese
1/8t ground black pepper
How to make it
Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with hot pasta to serve. (You can also put the butter in the microwave in a tall container, melt it, then throw in remaining ingredients and break out the immersion blender!)
- in a bowl mix ricotta, eggs, half the cheeses (cheddar, parm, mozzarella). mix in onions, garlic, parsley, and pepper.
- spread 1.5c alfredo at the bottom of the baking dish, top with a layer of noodles. arrange 1/3 of the seafood over the noodles, cover with 1/3 of the ricotta, then 1/3 of the spinach and another layer (1.5c) alfredo.
-repeat layers twice more ending with sauce on top. sprinkle with reserved cheeses. shake pan to get everything to settle.
- bake, covered loosely with foil for 45 min. remove foil and bake 10 min more until top is browned.
