Ingredients
  • 1 pound fresh salmon, poached and flaked
  • 1 tablespoon olive oil
  • 1/2 cup onion
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dill
  • 1/2 teaspoon parsley
  • 1/2 teaspoon dry mustard
  • 1 cup instant potato flakes
  • 1/2 cup panko crumbs
  • 1/2 cup or more water, save your poaching water

Directions
  1. Poach the salmon - Bring to a boil water, lemon, dill, parsley, celery seed, pepper flakes. Slide salmon in and cook for 3-4 minutes.
  2. Set aside to cool and then flake. Reserve 1 cup poaching liquid.
  3. Sautee onions and garlic in the olive oil. Add the dill, parsley and dry mustard at the end.
  4. Combine the salmon, sauteed onions, garlic and spices, potato flakes and panko crumbs.
  5. Start with 1/2 cup of liquid. Combine, with your hands, until it will form a patty that holds together. Add more liquid if necessary.
  6. Pan Fry: in oil or butter
  7. Oven bake:350*F for 30 minutes
  8. Grill on a broiler pan: Brush with oil, grill 3-4 minutes per side.
  9. You could freeze the patties on a cookie sheet and then put into a container.
