How to make it

  • Sift flour, baking powder, and salt into medium bowl and mix well.
  • Whisk eggs in a large bowl until blended. Add sugar, oil, molasses, vanilla extract, and toffee bits.
  • Stir the dry ingredient into egg mixture until blended.
  • Chill, covered for 30 minutes or longer.
  • Roll chilled dough into balls the size of walnuts. Flatten in hand. Dip one side in sugar and placer sugar side up on baking sheet spraying with non-stick cooking oil.
  • Bake in preheated oven, 400 degrees, for about 10 minutes, until lightly browned. Cool on baking sheets for 2 minutes. Remove to wire racks to cool completely.
  • Store in airtight containers. Makes about 100 cookies.
