Ingredients
  • 4 cups all purpose flour, sifted
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups sugar plus additional sugar for topping
  • 1/3 cup dark molasses
  • 1 1/3 cups vanilla extract
  • 1 cup toffee bits

Directions
  1. Sift flour, baking powder, and salt into medium bowl and mix well.
  2. Whisk eggs in a large bowl until blended. Add sugar, oil, molasses, vanilla extract, and toffee bits.
  3. Stir the dry ingredient into egg mixture until blended.
  4. Chill, covered for 30 minutes or longer.
  5. Roll chilled dough into balls the size of walnuts. Flatten in hand. Dip one side in sugar and placer sugar side up on baking sheet spraying with non-stick cooking oil.
  6. Bake in preheated oven, 400 degrees, for about 10 minutes, until lightly browned. Cool on baking sheets for 2 minutes. Remove to wire racks to cool completely.
  7. Store in airtight containers. Makes about 100 cookies.
