French Vanilla Cream Pound Cake Recipe

Usually I have a can of evaporated milk in the cabinet...but one day I took it for granted. The only thing available was some coffee creamer in the refrigerator. The addition of this creamer made a delicious pound cake. Enjoy!

Ingredients
  • 3 sticks butter (1 1/2 cups) at room temperature
  • 3 cups sugar
  • 3 1/2 cups all-purpose flour
  • 6 eggs at room temperature
  • 1 cup French Vanilla flavored creamer (I used International Delight)
  • 1 teaspoon vanilla
  • Large tube cake pan

Directions
  1. Prepare the cake pan by spraying non-stick spray and lightly dusting the pan with flour.
  2. Cut a circle of wax paper on the bottom of the cake pan for easy removal.
  3. Place butter in the bowl of electric mixer & cream well
  4. Add sugar to butter and mix until light & fluffy.
  5. Add eggs one at a time, beating well after each addition
  6. Add vanilla - mix well
  7. Gradually add flour & creamer, ending with flour.
  8. Pour batter into prepared pan.
  9. Drop batter filled pan on counter to level out batter and eliminate air pockets in the cake.
  10. Bake at 350 for approx 1 hour 10 minutes.
  11. Don't overbake.
  12. Glaze with powdered sugar, vanilla & water if desired.
  13. Enjoy!
