Another healthy way to eat fish and get away from the usual baking or frying..The kabobs are marinated in a herb and vinegar blend

Ingredients
  • 1 lb white boneless fish (cut in cubes)
  • 2 sweet peppers (cut in chunks)
  • 3 sweet potatoes boiled ( cut in cubes)
  • 4 oz shrimp (medium) cleaned
  • 2 onions (cut in chunks)
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp minced galic
  • white pepper to taste
  • 1/4 tsp sugar
  • 1/2 tsp oregano
  • 1/2 tsp basil

Directions
  1. Thread fish, peppers, sweet potatoes, shrimp and onions on skewers
  2. Place in a shallow pan or dish
  3. Combine olive oil, vinegar, garlic, pepper, sugar, oregano and basil and blend in an elecric blender
  4. Pour salad dressing over kabobs and marinate for 30 minutes or more, turing occasionally to coat
  5. .
  6. Boil 5" from heat for 10 - 15 minutes basting and turning once
