Ingredients
  • 1 head butter lettuce
  • 4 ripe tomatoes, thinly sliced
  • 1 pound asparagus, trimmed and blanched
  • 3 Tbsp. balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and fresh cracked black pepper
  • 2 Tbsp. chopped fresh parsley, chives or dill

Directions
  1. Arrange lettuce leaves on a platter. Arrange tomatoes near the outer edge of the lettuce. Arrange asparagus in the center. Drizzle with balsamic vinegar and olive oil. Sprinkle with salt, fresh cracked pepper and herbs.
  2. To blanch asparagus, cook in boiling water 2 minutes. Remove and cool in ice cold water. Drain well and pat dry.
