Angel Hair Pasta With Peas And Smoked Salmon
Ingredients
- 1 pkg of angel hair nests
- 1-2 cups chicken broth
- 1 box frozen peas (not the baby ones)
- 1 julienned red onion
- 8 thin slices smoked salmon (mine were about 3x6 and very thin)
- white pepper to taste
- 1 stick sweet butter
- 1/4 cup Lucini evoo
- fresh grated Italian cheese of your choice
- Add salt after tasting the salmon-mine was salty enough so I omitted it in the recipe
How to make it
- You can boil the pasta in kosher or sea-salted water and make the sauce at the same time.
- I always like to put a heavy serving bowl in the oven (just barely on)
- julienne the onion
- cut the salmon in slivers to match the onion pieces
- heat the sauce pan
- add butter and oil
- when melted, add onion, and frozen peas
- saute until peas are defrosted and onion transparent
- add broth
- add pepper
- swish around a bit
- drain pasta and plate on your warmed serving dish
- add salmon to your sauce
- saute 1-2 minutes
- pour sauce over pasta
- sprinkle with cheese and serve with cuban or italian crusty bread slices and a salad
- If your having company, garnish with a few green herbs
