How to make it
- Heat 2 tsp oil in large non-stick skillet. ad a sliced bell pepper,saute 3 mins or till almost tender. Add 2 tsp each minced garlic,grated ginger and curry powder.
- Cook 1 min. Add 1 lb. peeled and deveined medium shrimp. Saute 1 min. Add 1 cup chicken broth and 1 Tbs lime juice and cook 1 min or till shrimp are just cooked thru.
- Remove from heat and stir in 1/2 cup each reduced-fat sour cream and chopped cilantro.
