Zucchini Carpaccio Recipe
Tasty and easy appetizer to put together. I like the combo of flavors - zukes, cheese, tomatoes & almonds on warm crusty bread. Enjoy.

Ingredients
  • Zucchini, shredded
  • sliced almonds, toasted
  • Italian dressing, to taste
  • French bread baguettes, cut in half lengthwise
  • butter
  • Parmesan cheese, grated
  • Pear tomatoes or cherry tomatoes, halved

Directions
  1. Preheat broiler. Place zucchini in medium bowl. Add almonds and dressing; mix well. Set aside. Place baguette halves on large baking sheet; spread evenly with butter. Sprinkle with cheese. Broil 3 inches from heat 2 to 3 minutes or until edges and cheese are browned. Spread zucchini mixture evenly onto each baguette half. Garnish with tomatoes. Slice and serve. Serving amounts depend on how thick your baguette slices are.
