Bicol Express

- 1 kilo pork belly (cut into small strips) shopping list
- 2 cups coconut milk shopping list
- 1/4 cup shrimp paste shopping list
- 1 small ginger (chopped) shopping list
- 1 medium onion (chopped) shopping list
- 3 cloves of garlic shopping list
- 2 T cooking oil shopping list
- 10 pcs Bird's eye chili pepper shopping list
How to make it
- 1 kilo pork belly (cut into small stips)
- 2 cups coconut milk
- 1/4 cup shrimp paste
- 1 small ginger (chopped)
- 1 medium onion (chopped)
- 3 cloves of garlic
- 2 T cooking oil
- 10 pcs Bird's eye chili pepper
- Saute garlic and onions and ginger
- Add pork until color changes
- Add shrimp paste and simmer for about 3 minutes
- Add coconut milk
- simmer until pork is tender
- add chili peppers ( the more the hotter)
- simmer for another 5 minutes in low heat
- Serve with steamed rice
- Enjoy! careful it's hot

Sounds yummy - will have to search for the shrimp paste. Is it something I would find only in a Filipino market? Great post!
