Here's a popular Filipino dish. Well known for being very hot. I modified it to contain more meat as the original that was given to me was full of chili peppers instead of meat.

Ingredients
  • 1 kilo pork belly (cut into small strips)
  • 2 cups coconut milk
  • 1/4 cup shrimp paste
  • 1 small ginger (chopped)
  • 1 medium onion (chopped)
  • 3 cloves of garlic
  • 2 T cooking oil
  • 10 pcs Bird's eye chili pepper

Directions
  1. 1 kilo pork belly (cut into small stips)
  2. 2 cups coconut milk
  3. 1/4 cup shrimp paste
  4. 1 small ginger (chopped)
  5. 1 medium onion (chopped)
  6. 3 cloves of garlic
  7. 2 T cooking oil
  8. 10 pcs Bird's eye chili pepper
  9. Saute garlic and onions and ginger
  10. Add pork until color changes
  11. Add shrimp paste and simmer for about 3 minutes
  12. Add coconut milk
  13. simmer until pork is tender
  14. add chili peppers ( the more the hotter)
  15. simmer for another 5 minutes in low heat
  16. Serve with steamed rice
  17. Enjoy! careful it's hot

Sounds yummy - will have to search for the shrimp paste. Is it something I would find only in a Filipino market? Great post!

I think so. It is a little hard to find, but it's worth it. Filipino markets is the good place to look for it. Hope you enjoy it!
