Italian Egg Rolls Recipe
A different take on eggrolls. I used what I had on hand, so serving amounts & cooking time are approximate.

Ingredients
  • 2 c. cooked angel hair pasta
  • 1 c. diced cooked Italian Sausage
  • 1 c. chopped spinach
  • 1 tsp. minced garlic
  • 1 tbsp. capers (optional)
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 2 tbsp. chopped olives
  • 2 tbsp. grated Parmesan cheese
  • 2 tbsp. roasted red peppers, drained and chopped
  • Egg roll wrappers (as needed)
  • Vegetable oil (as needed for frying)

Directions
  1. Cook pasta, drain and cool. Chop pasta into approximately 1" pieces.
  2. Mix remaining ingredients, minus wrappers, to fully incorporate ingredients. Follow instructions on back of wrapper package for making egg rolls. Add enough oil to wok to cover egg rolls.
  3. Heat oil to 350F. Add egg rolls two or three at a time and fry until golden brown. Remove, let drain and serve with a marinara sauce for dipping..
