Good call on replacing the reisling with champane and adding the orange zest. Something a little lighter with such fresh flavours would be terrific. I haven't looked at your dessert croutons yet. Actually, I haven't come across such things before and that also goes for a chilled summer soup. So, I'll check out the croutons shortly. This is opening up a new dimension for me. Thanks.
