Back in the 70's this was very popular. Everyone enjoyed this not only to eat but to look at. A real healthy treat. Makes a great center piece. You can add differant types of fruit to this.

  • Ingredients:
  • For the Fruit salad
  • 1 large Watermelon ( about 15 lbs. )
  • 2 Cantaloupe melons
  • 2 Honeydew melons
  • ½ cup sugar
  • ½ cup fresh lime juice
  • ¼ cup fresh lemon juice
  • 2 Tbs. Orange flavored liqueur ( optional )
  • 2 tsp. Grated lime rind
  • 3 cups sliced fresh Strawberries, washed and halved
  • 2 cups black and red seedless grapes, washed ( optional halved )
  • 1 Pt. Blue berries washed
  • Special Aids:
  • Water soluble black marker
  • melon baller
  • vegetable peeler
  • Tip:
  • It's important to purchase watermelons that are fully ripe, since they don't continue to ripen once they've been picked. A ripe melon feels heavy for its size and has a sweet fragrance.

Directions
  1. Carving the Basket
  2. 1 Lay a dampened dish towel on a counter or table and place melon top to prevent it from rolling.
  3. 2 With a water-soluble marker, draw outline of basket onto melon, making sure the handle is at least 1 ¼ inches wide.
  4. 3 Using a large sharp knife, carefully cut melon along marker line.
  5. 4 Remove excess rind and set aside.
  6. 5 With a vegetable peeler, even out scalloped edges of watermelon. Cover watermelon basket with plastic wrap and set aside.
  7. Making the fruit salad
  8. 1 With a melon scooped out flesh flesh cantaloupes and honeydew.
  9. 2 In a large bowl, combine sugar, lime juice, lemon juice, orange liqueur and lime rind. Stir well.
  10. 3 Add all melon balls, strawberries and grapes; toss to combine. Allow fruit to chill in refrigerator for 30 minutes.
  11. 4 Just before serving, transfer fruit salad to watermelon basket.
  12. Serve.
  13. Tip: it is important to purchase watermelons that are fully ripe, since they don't continue to ripen once they've been picked. A ripe melon feels heavy for its size and has a sweet, fresh fragrance.

  15. Make Ahead: Make the fruit salad portion up to 1 day ahead. Cover with plastic wrap and refrigerate.
  16. Easy Substitute: Kiwifruite, peeled and cut into quarters, makes a delicious substitute for the berries in this recipe.
  17. Simple Elegance: Offer this fruit salad as a tasty desert. Serve it, without the melon basket, in small crystal bowls. Top with a small mond of lemon sorbet and garnish with a sprig of mint.
