Spinach Croissant Strata Recipe
A quick and easy lunch, brunch, light dinner or breakfast. Serve with fresh fruit or fruit salad.

Ingredients
  • 10 ounces frozen chopped spinach -- thawed
  • 4 large croissants
  • 6 eggs
  • 1 1/2 cups milk
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 6 ounces Monterey Jack, Swiss or Gruyere cheese, grated

Directions
  1. Squeeze out as much water as you can from spinach. Grease a 9 by 13" baking dish.
  2. Cut croissants in half sideways. Arrange them in two rows, overlapping slightly, in the dish.
  3. Beat eggs in a medium bowl. Stir in milk, spinach, nutmeg and pepper. Pour over croissants. Sprinkle with cheese.
  4. Cover and refrigerate at least 8 hours, up to 24 hours. Preheat oven to 350 degrees. Uncover and bake until bubbly and light brown around edges, 30 to 35 minutes.
