Ingredients
  • 1 1/2 pounds waxy red or white potatoes, peeled and cut into 1/2 inch to 1 -inch cubes
  • 1/4 cup butter or olive oil, more or less
  • 1 teaspoon chopped fresh marjoram, or 1/2 teaspoon dried, optional
  • 1 large onion, peeled and chopped
  • salt and freshly ground black pepper to taste

Directions
  1. Place the potatoes in a pot of salted water, bring to a boil, and simmer until nearly tender, 10 to 15 minutes.Drain well.
  2. Heat the butter or oil over medium-high heat in a 12-inch non-stick skillet for 3 to 4 minutes.You can use more butter or oil (for crisper potatoes) or less (for less fat).Add the potatoes, marjoram, and onion and cook, tossing and stirring from time to time (not constantly), until the potatoes are nicely brown, 10 to 20 minutes. Taste and add salt and pepper as needed, then serve.
