Peppery Citrus Chicken

PEPPERY CITRUS CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991.
Ingredients
- 2 cloves garlic minced shopping list
- 1/4 cup orange juice shopping list
- 1 tablespoon vegetable oil shopping list
- 1 tablespoon chili powder shopping list
- 1 tablespoon paprika shopping list
- 1-1/2 teaspoons cumin shopping list
- 1 teaspoon oregano shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/2 teaspoon hot pepper flakes shopping list
- 1/2 teaspoon coriander shopping list
- 1/2 teaspoon salt shopping list
- 2 tablespoons water shopping list
- 4 pounds boneless skinless chicken breasts shopping list
- 2 medium limes cut in wedges shopping list
How to make it
- Preheat oven to 375.
- Place all ingredients except chicken and lime in bowl of food processor and process into paste.
- Place chicken in large baking pan and spread with paste then cover and bake 45 minutes.
- Serve with lime wedges as a garnish.
