Artichoke Tomato Side Dish Recipe

Ingredients

2 1/2 cups canned, drained artichoke hearts (two 14-ounce cans), rinsed and cut into halves or quarters.

2 medium onions -- sliced

2 tablespoons olive oil

Italian herb seasoning, to taste

2 medium tomatoes -- sliced

6 ounces mozzarella cheese, sliced

Directions

Saute onions in olive oil 5 to 8 minutes or until tender. Spoon evenly into 2 quart oven-proof baking dish. Sprinkle with Italian herb seasoning.

Arrange tomato slices, artichokes, and cheese on onions, over-lapping slightly in center of dish. Cover dish with lid or foil. Bake at 375F for 20 minutes, or until heated through & cheese is melted.
