How to make it

  • Mix together flour, baking powder, salt and sugar in a bowl.
  • Melt butter in microwave or on stove.
  • Add milk, egg and vanilla to dry mixture and mix until smooth.
  • Add melted butter and mix until butter is incorporated.
  • Cook on griddle.
  • Tips: Don't overmix. You want it to be smooth, but if you mix too long, the pancakes aren't as perfect. Feel free to double the recipe. Make small pancakes or really large ones -- all work well. You can add blueberries to the mixture and make blueberry pancakes. Or, they are yummy topped with warm homemade applesauce (cut up some 3 or 4 apples, put in a saucepan with 2 teaspoons of lemon juice, 2 TBS water, a generous sprinkling of sugar and a generous sprinkling of cinnamon and cook with the lid on until apples soften and can be mashed with a fork).
