Ingredients
  • 1 large eggplant
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 pinch oregano
  • salt and freshly ground black pepper
  • tomatoes -- sliced
  • bocconcini balls
  • fresh basil leaves
  • pine nuts
  • pesto sauce -- optional

Directions
  1. Heat grill.
  2. When grill is hot, slice eggplant lengthwise about 1/4 - 1/2" thick. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Brush both sides of the eggplant slices with the oil and vinegar mixture.
  3. Place eggplant on the hot grill. Grill about 15 to 20 minutes, turning once.
  4. Layer with fresh basil, a tomato slice, and a small bite size ball of fresh Bocconcini. Drizzle with olive oil, and garnish with pine nuts.
