Ingredients
- Dressing:
- 1/4 Cup olive oil
- 3 Tbsp balsamic vinegar
- 1 Tbsp orange marmalade
- 1 clove garlic, finely chopped
- 1/2 tsp curry powder -- optional
- salt & pepper, to taste
- Salad:
- 2 loaves French or Italian bread
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 8 Cups mixed greens
- 1 Cup cooked turkey or chicken, cubed
- 1 Cup cubed papaya and/or mango
- 1 Cup red and/or green grapes
- Walnuts, chopped, to taste - optional
- 1 red apple, cored and cubed
- 1 avocado, peeled and sliced in crescents
Directions
- Whisk together dressing ingredients until blended. Set aside.
- Cut one inch off the top of each loaf of bread. Cut around inner edge of crust to remove the inside of the bread & tear out all of the interior of the loaf, leaving a 1/2" shell.
- Combine oil and vinegar. Brush on inside of each loaf. Bake at 375 F for 5 minutes. Cool.
- Combine greens, turkey or chicken, papaya and/or mango, grapes, apple & walnuts. Pour dressing over salad. Toss to coat. Spoon into bread baskets. Top with avocado slices.
