Ingredients

2/3 cup flavored cracker crumbs

1 cup milk

2 eggs

1/2 cup chopped onion

1 teaspoon salt

1/4 teaspoon pepper

1 1/2 pounds lean ground beef

Directions

1.Put the cracker crumbes and milk into the bowl.Soak for ten minutes.

2.Stir in eggs, onions, salt, and pepper.

3.Add the meat.Mix well.

4.Pack the meat mixture lightly into the muffin cups.

5.Balance the muffin pans carefully on cans or on a rack inside a heated box or ovens.

6.Bake for 40 minutes.

7.Remove the muffins from the pans, and drain them on a plate covered with paper towels.

8.Serve hot with catsup.

Hi Sandy. Think this would be great for the little ones -- easy to pick up, & fun to eat. You could make them look like a cupcake by frosting them with mashed potatoes & a cherry tomato on top. (Just an idea :)) Reminded me of another recipe for stuffin' muffins (stuffing made in muffin tins) from Food Network. Thank you for sharing this fun recipe.
