MJADARARice with Lentils

- 2 cups brown lentils 1 C presoaked rice shopping list
- 2 medium onions, thinly slice lengthwise—like feathers shopping list
- 1 tsp. salt ½ tsp. ground cumin ½ tsp. black pepper shopping list
- ¼ to ½ C olive oil shopping list
How to make it
- Wash and clean lentils. Boil in water to cover with several whole cloves of garlic until almost tender.
- Fry the onion in oil until nicely browned. (Add some sugar to them to get them to brown quicker).
- Mix in the rice with the lentils and the spices.
- Pour the oil and onions over this and add boiling water to cover. Reserve some of the onions for garnish.
- Cover and simmer gently until the rice is soft and all liquid is absorbed, adding more boiling water if necessary
- More rice can be added if desired.
- Arabic spices can be used in addition: 2 parts ground Allspice, 1 part ground cinnamon, 1/2 part ground cloves, 1/2 part ground nutmeg. All spices should be freshly ground, before mixing, and then kept in air tight container.
