How to make it

  • Wash and clean lentils. Boil in water to cover with several whole cloves of garlic until almost tender.
  • Fry the onion in oil until nicely browned. (Add some sugar to them to get them to brown quicker).
  • Mix in the rice with the lentils and the spices.
  • Pour the oil and onions over this and add boiling water to cover. Reserve some of the onions for garnish.
  • Cover and simmer gently until the rice is soft and all liquid is absorbed, adding more boiling water if necessary
  • More rice can be added if desired.
  • Arabic spices can be used in addition: 2 parts ground Allspice, 1 part ground cinnamon, 1/2 part ground cloves, 1/2 part ground nutmeg. All spices should be freshly ground, before mixing, and then kept in air tight container.
