Ingredients
  • 2 tablespoons olive oil
  • 8 boneless, skinless chicken breasts, cut into chunks
  • 2 onions, chopped
  • 2-1/2 cups chicken stock
  • 1 teaspoon dried oregano
  • 1 teaspoon parsley, chopped
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoons ground cumin
  • 1 can diced chiles
  • 2 cans cannellini beans also known as white kidney beans, rinsed well and drained
  • Note: You could use any type of bean you like in this recipe.
  • 4 green onions, chopped
  • 1/4 pound shredded Monterey Jack cheese or TexMex cheese
  • Sour cream

Directions
  1. Heat olive oil in a LARGE fryingpan or saucepan over medium heat.
  2. Add chicken and sauté for 8-10 minutes.
  3. Note: Cook until chicken is tender.
  4. When chicken is almost tender, add the chopped onions.
  5. Mix in chicken stock, oregano, parsley, cayenne pepper, cumin and chiles. Reduce heat. Simmer for 20-25 minutes.
  6. Add cannellini beans. Simmer for 10 minutes. Garnish with green onions, shredded cheese, and sour cream.
  7. Serve with a tossed salad of your choice and a loaf of bread.
  8. Serves 6 - 8
