Eat Your Veggies Cake

- 1 stick butter, melted shopping list
- 2/3 cup vegetable oil shopping list
- 4 eggs shopping list
- 1 ½ c sugar shopping list
- ½ c brown sugar shopping list
- 2 tsp vanilla shopping list
- 2 cups flour, sifted (0r use cake flour) shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- ½ tsp salt shopping list
- 2 tsp cinnamon shopping list
- ¼ tsp nutmeg shopping list
- 2 cups shredded/grated carrots shopping list
- 2 cups shredded/grated zucchini (drain on paper towel to remove some of the moisture) shopping list
- icing shopping list
- 8 oz cream cheese shopping list
- ½ cup butter softened shopping list
- 1 tsp vanilla shopping list
- 3 ½ cups powdered sugar shopping list
- 1 cup finely chopped pecans (optional) shopping list
How to make it
- Preheat oven to 350 degrees. Grease and flour 2 round cake pans. In a mixing bowl, beat butter, eggs, oil and sugar and vanilla. Sift together flour, baking soda and powder. Add in flour mixture salt and spices to batter. Mix until combined and smooth but do not over mix. Fold in the grated veggies. Pour into the 2 cake pans and bake for 35 minutes or until toothpick inserted in center comes out clean. Cool completely on wire racks.
- Beat together butter and cream cheese and vanillas. Slowly add in the sugar and beat until fluffy. Stir in pecans (optional). Frost the cake.
