How to make it

  • Preheat oven to 350 degrees. Grease and flour 2 round cake pans. In a mixing bowl, beat butter, eggs, oil and sugar and vanilla. Sift together flour, baking soda and powder. Add in flour mixture salt and spices to batter. Mix until combined and smooth but do not over mix. Fold in the grated veggies. Pour into the 2 cake pans and bake for 35 minutes or until toothpick inserted in center comes out clean. Cool completely on wire racks.
  • Beat together butter and cream cheese and vanillas. Slowly add in the sugar and beat until fluffy. Stir in pecans (optional). Frost the cake.
