Ingredients
  • 12 - 18 mini pumpkins
  • 1 1/2 cups sugar
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 4 eggs -- lightly beaten
  • 1 can pumpkin puree -- (29-ounce) pureed (solid-pack) pumpkin
  • 1/4 cup heavy whipping cream
  • 1 can evaporated milk -- (12-ounce)
  • Whipped cream
  • garnish: Pie-crust leaves

Directions
  1. Preheat oven to 425 F. Cut off tops of pumpkins. Scoop out seeds, strings and enough flesh to leave 1/2 inch of flesh on sides and bottom. Set aside.
  2. Prepare filling: With electric mixer combine sugar, salt, spice, eggs and pumpkin puree. Beat well to combine. Gradually add cream and milk on low speed. Mix until blended.
  3. Fill each pumpkin. Place in baking dish. Add about 1 inch of water to bottom of dish. Place in oven for 25 minutes. Reduce heat to 350; bake 35-45 minutes or until set. Cool 20 minutes before serving.
  4. Top with whipped cream and garnish with pie-crust leaves.

  6. Use refrigerated pie crusts to make leaves for garnish. Cut leaves with knife or cookie cutter. Use back of knife to create veins in leaves. Place in single layer on nonstick baking sheet. Bake in 350-degree oven until nicely browned. Serves 12-18

Beautiful presentation! I have used mini pumpkins and stuffed them with stuffing for the turkey. They turn out great that way, and moist.

Each Thanksgiving I say I am going to make something in those little pumpkins .... either pumpkin pies or use them for the first course with a soup in them....so far I just have thought about it......LOL,,,maybe this will be the year...five forks
