A chewy nut and fruit bar. a nice mixture that is sure to please. One of these is quite filling. It is low-cal and low-fat. Very temting.

  • Ingredients:
  • 2 cups all-purpose flour
  • ½ Cup Equal spoonful or equivalent sweetner
  • 1/8 tsp. Salt
  • 8 Tbs. cold stick margarine, cut into pieces
  • 1 large Egg
  • 1 Tbs. Skin milk or Water
  • 2 Tbs. grated Lemon peel
  • 2/3 cup Sugar-free or lite seedless raspberry spreadable fruit.
  • 1 tsp. Cornstarch
  • ½ cup chopped toasted almonds, walnuts, or pecans

Directions
  1. 1)Preheat oven to 400. Grease an 11 x 7-inch baking dish.
  2. 2)Combine flour, Equal and salt in a medium bowl; cut in margarine with pastry blender or fork until mixture resembles course crumbs. Mix in egg, milk and lemon peel. ( Mixture will be crumbly.)
  3. 3)Press mixture evenly onto the bottom of a greased 11 x 7-inch baking dish. Bake at 400 until edges of crust are browned, about 15 minutes. Cool on wire rack.
  4. 4)Mix spreadable fruit and cornstarch in a small saucepan; heat to boiling. Boil until thickened, stirring constantly. 1 minute; cool slightly. Spread mixture evenly over cooled crust; Sprinkle with almonds. Bake again at 400 until spreadable fruit is thick and bubbly, about 15 minutes. Cool on wire rack; with a sharp knife cut into 24 squares.
  5. Calories per bar: 110, Fat 6g, Sodium 59mg

Rasberries ar a fruit my son can have so i will be trying these, but i have to use real sugar for him as sweeteners are usually sorbitol or manitol and he can't have those. Thankyou for your wonderful recipes I have found many that would be easy to convert for him, which is usually not the case.
