    **July 2018 Recipe Challenge--Sandwiches**

Can we get a "high five" here? WOW! I didn't have breakfast and it was too early for lunch. Made this for "brunch." I have to confess that I didn't measure. Bad habit when I'm just making a quick bite to eat for myself. I had a few mushrooms in fridge so I chopped them up and sauteed with the garlic. When it came to the egg, I whisked in some milk to make it fluffier. I really wanted to put this on rye bread, but the slices were too large to fit in the toaster. Used a seeded whole grain bread instead. OMG! This was incredible! Thank you, Chuckieb, for sharing your recipe.

Considered making this but my eggs are over 1 year old.

Pointsevenout--What? How did that happen with the eggs? I thought of you when I was making this. I know you like healthier options. This would be good with egg whites if you are worried about fat or cholesterol. I got up this morning and made one for hubby. He really enjoyed it.

Wonderful photo DIZ! I bet the sandwich was good! Sorta like a 'one-pot' meal but a sandwich with all good things.

Serious. I just quit cooking ever sense I dispatched mother to her daughters place. Making that spinach sammie was the first time I used a skillet in a long time. This egg and spinach sammie has my interest. Will have to get a fresh dozen or half dozen eggs, or egg whites. But how to recycle these old eggs is the question.

Very tickled you liked the sandwich recipe DIZ3. My hubby is a big fan of it and it used to be my son`s favourite. It`d be awesome on rye. Lovely photo.

Do get rid of those old eggs Points. I feed the crows at my house and they love it if an egg has cracked and I put it out for them but I don`t even know if they`d touch a year old egg.

Thank You Everyone! Sorry it took me so long to respond.

Chuckieb--I will definitely give it a try on rye bread. :)
