**January 2018 Group Recipe Pasta Challenge**

Made this for the group recipe challenge. Fantastic! The only sun dried tomatoes I could find were all seasoned with herbs which gave this dish a wonderful flavor. I omitted the wine and added extra chicken broth. I also used more percorino cheese than suggested. Love percorino! The red pepper flakes made it slightly spicy, but nothing that I couldn’t handle. This is perfect for a meal on its own, but I did saute some fresh spinach to go along with it and served with a white fish (cod). YUM!
