Twice Baked Breakfast Potato

    Made Frankieanne's recipe for
    Twice Baked Breakfast Potato
    for this month's IMI11 Breakfast Challenge.

    I baked my potato the night before. I didn't have a large potato, only a medium one, and a large would have been able to hold the egg much better. I didn't use the microwave for this recipe at all. I mashed my potato mixture last night and mixed it in with the cheese and made the well and then set it in the fridge overnight.

    When I got up this morning I popped it in to the oven on a small bake sheet for 10 minutes to warm it up. I rarely cook at 425F so I deviated from Frankieanne's instructions and after breaking the egg in to the well (which was very messy and it overflowed the sides big time because my potato wasn't big enough) I baked it at 350F for ten minutes. The eggs were still super runny and raw, so I turned the oven up to 425F and cooked it for another 7 minutes before adding the bacon pieces and green onion. Then I cooked it for another 3 minutes.

    My egg yolks weren't hard but they weren't runny. I'll make this again, because both hubby and I very much enjoyed it, but next time I'll follow Frankieanne's instructions properly. My bad. :)

    This is a really fun recipe and would make a super nice brekkie for company or for Christmas morning! You can make up the potato boats the night before and then just finish them off the next morning. Lots of flavour. They look fancy. This is yummy!

    Great pictures Janet! I really like the looks of this recipe and think too it would be ideal if you were feeding multiple people. I too like that it can be prepped the day/night before and too you can make varying combos of stuffing. Nice!
