    I love salmon but salmon can be kinda "bleah." It needs something to flavor it up and this does it nicely and adds a nice crunchy thing besides! Easy and I always have these ingredients around.

    I've done this on haddock, which is the same as cod, really. It's delicious on any fish. I'm so glad this one came out good. I get nervous when someone makes my recipes...not that confident, haha!

    And I love salmon. I grew up with Salmon. My Dad used to go Salmon fishing on weekends when I was growing up. They're magnificent fish. Someday I will post a picture of me with my Dad and a gi-normous salmon he caught. It was as big as me!
    Michelle, I have never bought red snapper or mahi mahi and I only tried Tilapia just recently. :)

Next time though I'll make sure I'm properly prepared as the zest would have been lovely in the coating.
    My salmon fillets did not have skin on them and so I had a brain blip and decided that I would just coat all sides with the panko mixture, fry two minutes on each side and then throw in the oven alongside some smashed potatoes that were baking at 350F for ten minutes. So my salmon was totally browned already from the frypan and it just sealed in all the lovely freshness and juices from the fish. It was honestly delectable. Hubby and I were both swooning. I used regular dijon and since I only had two small fillets I just eyeballed the quantities of panko and seasonings accordingly. Also served buttered pan-fried asparagus on the side.
    AWESOME meal and one I will totally repeat.
    I bought the salmon at a local grocery store here called Sobey's which does pride itself on fresh fish as they are Maritime based. The salmon was certainly great quality and had a real 'sweetness' to it. Sublime.
