Raspberry Quick Bread

    From Frankieanne: Raspberry Quick Bread

We love raspberries and, even screwing up the swirling, we ate one small loaf while it was still kinda warm right out of the oven - yum! I was going to keep one for us and give one to a friend, but guess what? We kept the second one, too! I've wanted to make this for the longest time and it was definitely worth the wait!

Ellie and Michelle, I'm sure your swirls will come out better than mine did - haha! I kept thinking this bread/cake would taste good with a very light lemon or vanilla flavored drizzle. Doesn't that sound good?!

Oh wow does this look good! Saved. Ideal with a morning cup of coffee or for an after dinner "I want something good" 😋 . Thanks for pointing it out and your swirls are beautiful!

This looks so good! I'm not very good at fancy swirls either, Bakerme, but I will bet they don't have to be perfect for this to be good. Going to add this to the "must try" list.

I am so glad this worked out for you, Bakerme, and thank you for your review!
As for the swirling, I always use a dinner knife and stick it in the middle of a glob of the jam and push down to the bottom of the pan and then swirl. That way, you push the jam down into the batter a bit. But, as you can see from my own picture, I do have a big glob of jam in the top part of a piece of bread. :)
Your review is making me want to make this again.
    Thank you again, Bakerme.

Would this work with blueberry or blackberry or strawberry or other jams? I have a crop of jams from last year that I should think about starting to use up.

Linda, the recipe photo is Frankie's, not mine, so I can't take credit for the lovely swirls. Trust me, mine didn't look like that at all, but it sure tasted good with coffee!

DIZ, my swirls were far from perfect, but they didn't effect the flavor - haha!

Frankie, I could feel the bottoms of the pans with the skewer, but maybe it wasn't thick enough to push all of the jam down?? I will try the knife trick next time. ;)

Points, we love raspberries! That's why the name of the recipe caught my eye, but I think this yummy cake would work with whatever flavor you like. Good idea!

I wonder if you heat the jam up a little if it would loosen and swirl better. Not so much that it's runny but enough so it's not so cold it just stays solid. ???

Yes Pointsevenout, the recipe should work the same using other jams.

Yes, I think the dinner knife is going to shove more jam down than a skewer. Heating it up a bit sounds like a good thing to try, Linda! Good idea!
    Blackberry! That sounds good, pso!

Checking my Recipes Reviewed file, I see that my review is gone from the recipe page on this one! I typed out another review and rated the recipe again, but it won't accept my new post and I get a message saying I already rated it. I tried several times and it won't post - grrrrr. Any ideas how I can get a new review to post?? A few other recipes I've made and reviewed are also missing from the recipe pages. Very weird.

Did you try leaving a review without the stars? The stars usually show up on subsequent posts.
Many people delete comments on their home page which seems, at times, to delete them from the recipe page as well.

This looks so good, I must make it the coming days! :)

Thanks, Cosmicmom. I know I accidentally deleted a review of one of my recipes when I deleted the comment from my profile page, not knowing both would disappear :( This bread (cake, really) is super yummy!
