    I used the shrimp part of this recipe with a couple of the leftover polenta log rounds for my lunch today so I didn't make it as exactly written. I was curious how shrimp would go with the polenta and it made for a great combination and a great lunch.

    Scallops are the BEST shellfish ever. Nobody around here knows what a sea scallop truly is. Bay scallops around here look like pencil erasers and sea scallops a little bigger. True bay scallops are at least 2" diameter and 1" thick.
    If cooked wrong they can have that squeaky quality and taste like pencil erasers.

    I haven't had scallops in years. The one time I tried them I didn't like them so I haven't tried them since. I suppose I should try again.
