Italian food

    I can't recall any food of Italian orignin which I haven't enjoyed. i remember one dish I had when I was about nine, lovingly prepared by our neighbors elderly aunts visiting them from Italy. It was a marvelous red sauce (gravy they called it) with handmade pasta. No machines for them. I can still still the pasta draped over a clean sheet on the bed to dry.
    It wasn't until much later that I discovered the meat in the sauce was comprised of organs: brains, heart, lungs, gizzards. What ever had been in the chicken when it drew it's last breath was in the sauce! I suspect the innards had been scrupulously cleaned. Nedless to say I was horrified for several minutes then got the giggles.
