Decorating Saturday

    Going to finish house decorations and hopefully wrapping between today and tomorrow!

    Doing a beef stew with potatoes carrot and peas in the oven for dinner.

This is the school system where my husband is executive vice president in charge of licensing and accreditation for the schools. This years gathering is quite special as it marks many milestones for the schools systems growth in the central Florida area.

    The party is being held at Rosen Shingle Creek Resort. My company, WELBRO Building Corporation completed Rosen Shingle Creek Resort in 2007 and it won our company many awards for its execution. Next week I'll be back at the same resort for a CIO conference being conducted over two days.

    Eating healthy during this time of year can really be a challange. But I've found that if you are creative with the typical buffets presented during these affairs you can really do quite well. A regular offering is a sandwich build buffet that has meat, bread, cheese and veggies of some variety. Skip the bread and cheese and you can make a very light salad from the veggies and lean sandwich meats. If they offer a hot dish buffet there are generally veggies, fish, chicken, starch, gravy, salad, breads. Well same thing -- skip the starch and you are good to go.

    I have found that the better the resort the better the healthier the food. At the finest resorts the buffets will have very light fare, well seasoned and cooked. They present variety which includes lots of fresh foods with complementing tastes. Their chefs see no need to bury the goodness in heavy sauces, cheeses, gravies and dressings. I learn alot from those spreads.

    Not sure about dinner---leak under the sink today needing fixing---so probably something quick after spending the day with the Home Depot crowd. Maybe chicken chunks sauteed skinless with seasonings and some kind of taters.

    Good advice on the holiday buffet eating. When attempting to eat on the "cheap" you will find that the food is less than healthy. Vegetables are expensive.

    Clueless on supper plans as of yet....the morning seems chilly, but I know we have a lot of warm humid air heading our way, so I'm in a quandry. Tackling the laundry first and hoping for inspiration will hit me while I stare at TV and fold clothes.

    Working so It is going to pasta for the family. I took out some pasta sauce that I had frozen so all hubby has to do is boil some water and cook the pasta itself. I think he can handle it but I won't be suprised it I come home and he ordered pizza.

    OTTER--I hear ya on the damnable tree. My inner scrooge says tomorrow is the day to go batship crazy 'round here dragging stuff around. 'Course, knowing me--that will involve lots of vaccuuming, too. LOL

    Hubs has requested Sparow's chicken casserole tonight instead of the chicken chunks. Go figure--it's cold--and he wants comfort food, LOL Her recipe sounds so good, can't wait to try. I'm going to do the spinach version.

    Other than that I have baked 7 dozen cookies...peanut butter cookies and chocolate chip. Tomorrow will do Pat2me's oatmeal cookies and the snickerdoodle one I like from GR.

    And here I get a chance to sit down and actually write something and my teen is hovering over my shoulder NEEDING the computer...some drama going on again. LOL

    I think I did 7 seven loads of laundry,does that count...it was sheets and towels and blanket day. All the clean spares had been used up. Honestly I had a mountain of laundry.

    I might try some of the flourless peanut butter cookies tomorrow. And I still have to make the grand marnier chocolate truffles so they can mellow. It is $3.50 for one of those little nips of Grand Marnier....expensive stuff. But oh, so good. My biggest spluge this year. LOL the liquor and the chocolate.....but it will be a great little treat for when we are feeling blue.

    Tired. the fam had the pasta and I had leftover eggrolls, mashed and a 1/2 pork chop.
    now I am resting my legs with a nice rum and diet pepsi. AHHH!
