Full Rack Of Ribs Friday

    Morning! It's another rainy day today, so I'm glad I got Mesquite Grilled Chicken In White Barbeque Sauce made yesterday while we had one dry day, delicious by the way Lori :) The past couple of days have been so busy we are finally having a day to just chill out, well me and Caiden at least lol! Bri is excited since today is the last day of school until Thanksgiving break! Then they have the whole week off, 3 days of which they will spend at Grandma and Grandaddy's house.

    Pulled out some ribs, I think I will do the boil and bake method like usual, they are just so tender that way! Will serve with brussel sprouts and green beans. Hope everyone has a great day!! Oh and my neck is all better :)

    So good to see you! I'm glad Brad is mending well, but hate that he still experiences pain..we have missed you..so cool that both you & Lori are back:)

    We're getting ready for Thanksgiving, we'll have my family here..i want to get a 20 lb turkey so there are plenty of leftovers to send home with everyone:) We love turkey day:) Rick will make pumpkin pies (he makes they every year the day before) I' make the stuffing the night before..we like to prep as much as possible before Thanksgiving:) I do wish I had 2 ovens..even though I'd only use both once a year:)

    Well, need to get this day going..TGIF!!!!!!!!! Have a great day all!

    Last night we had friends over for supper and I picked up chipotle maple pork tenderloin from the butcher counter at Sobey's and served it with cauliflower and cheese sauce, a mixed green salad and yams mashed with butter and maple sugar. It felt like a bit of a cheat since very little required my doing anything but not burning it but it turned out well and even the kids ate it.
    Not sure what tonight will bring but there's a good chance we will go out if the kids are all busy. Have to get to work now but will try to post again later. All the talk of ribs has me thinking of having some of those too. Wishing everyone a happy Friday,

    Tina, how did it go with the girl at work having her baby have you heard? How's your finger this morning? Not to be an old grouch, but I don't agree with your statement " I guess we have to let dads be dads and be grateful they are with us." All the power to you if you can feel like that, but again I don't feel that I need someone in my life who is nasty or thoughtless to me regardless if they are a parent or not. Infact personally, I think a parent should be loving and kind and if they aren't, then they don't deserve to have a child who is loving and kind to them. I know I sound harsh. Just had to say it. :) And what is this Cards against Humanity game? I tried to Google it but didn't really get the gist.

    Hey Michelle! Glad you're getting some warmer weather. I think our temps are supposed to go above zero next week as well. A Chipolte Maple pork tenderloin sounds wonderful. Happy Friday back at ya!
    Well....when I got home from my errands yesterday Jim was already home. He'd been let go. I was quite shocked. Not the way one likes for things to end, but "Que Sera, Sera". :)
    We are totally fine. Infact, Jim's been thinking about retiring and may very well choose that route. High Tech is a high stress, fast paced career with lots of highs and lows. He worked for his first company for 19 years and with this one for 8 1/2 which is quite amazing as a lot of people change it up every couple of years. He'll take a couple of months just to think about things and what he would truly like to do, and go from there. I've had such a wonderful time travelling abroad with him the last few years. It was a fairy tale experience and I will remember each and every moment (ya right, like I can remember anything for long) :) with great fondness.
    We have tickets this evening to go see Chris Hadfield (Famous Canadian Astronaut) speak at the National Arts Centre. Gotta figure out something to make for dinner.

    Hi Janet!! No plans yet for Michael and I, but the time they are keeping them, he only has one evening off, so not much to plan! Oh my on Jim being let go! At least y'all are okay with it and maybe it will all be for the better :) Good that you got lots of great memories that you will (hopefully) always remember :P I think we all lived vicariously through your adventures :) Have a great time this evening!

    So....of course I've heard the age old debate about whether it is safe to cook your dressing in the turkey or out but this morning I read a short post from Alton Brown on the topic and I need clarification.

    He says: "When it comes to turkey, stuffing is evil. That’s because stuffing goes into the middle of the bird and is extremely porous. That means as the turkey around it cooks, juices that may contain salmonella bacteria soak into the stuffing, which then must be cooked to a minimum of 165 degrees F in order to be safe.
    Getting the stuffing to this temperature usually means overcooking the turkey. They way I see it, cooking stuffing inside a turkey turns the turkey into a rather costly seal-a-meal bag.
    If you’re a stuffing fan, I suggest cooking it separately (in which case it’s “dressing,” not stuffing) and inserting it into the bird while it rests (to collect the turkey juices). Odds are no one will notice the difference"

    My question is this.....so the inside of the turkey, including the juices, may not be at 165F when the turkey meat itself is, but somehow it's okay to put the dressing in there then, as opposed to before? Wouldn't it be possible for the juices to still have some salmonella hanging around?
    Plus, why have I never ever in my whole 54 years never heard of anyone that I know that has ever been sick from eating dressing stuffed inside a turkey and this is the way it has been done all that time?

    I froze to death in the tent this morning although it was in upper 20s and I had toe warmers on my socks to keep my feet from getting too cold. It is a damp cold that eats into you. We succumbed to the lure of biscuits and gravy at the restaurant in Edgar Springs and had a big breakfast! Wayne is debating whether or not to take the "chair blind" and tromp down in the woods this afternoon. I am staying inside although if it was not so windy I would go across to the side field and hunker down -- it is heavily wooded and lots of underbrush.

    No deer this morning. Heard one in the leaves but didn't see it. Invisible deer? Chameleon (GMO) dna? LOLOL.

    Janet..I have always cooked stuffing in the bird..I believe the temp of the turkey is usually around 170F and the stuffing should always be 165F..I have used a Reynolds cooking bag and that helps keep the turkey moist since it cuts the cooking time down quite a bit...a 20 lb stuffed turkey takes aprox 3 1/4 to 4 hours with the cooking bag..without the bag takes about 6 - 6 1/2 hours:) I might just use the cooking bag again this year:)

    Hi Michelle, so glad your neck is better. I'm happy you liked the chicken and white BBQ sauce. The kids get a week for Thanksgiving? Ours only get Thurs and Fri. Does your husband work nights all the time? Bryan does 2 weeks of days and 2 weeks of nights. I wouldn't know if I was coming or going. Lol. You and Marie are killing me with all these ribs. I'm thinking that will be good next weekend. I have some in the freezer.

    Hey Michelle B. sounds like your dinner was a huge success. Such a great idea to do that when people are coming. I call it smart, not cheating! I love Barefoot Contessa and she's always showing how she cooks some and picks up some other things for her dinner parties. :).

    Janet, OMG! What a shock for Jim! At least you are going to be O.K. with it and it might be the best thing that has ever happened. You never know what is going to be around the next corner. I am sure he received a good severance package with a few extra benefits. I am sure Jim will enjoy retirement too! I have never heard of anyone being sick from eating in my whole 65 years either! I was taught to rub a turkey with salt. It clean the insides and outsides then rinse well and that will get rid of bacteria. I do that with whole chickens or Cornish game hen as well. I love to see Chris Hadfield speak.

    The secret is to remove the stuffing as soon as the turkey is out of the oven and put it in a casserole dish. If you want to keep it hot, just put it in the oven for a bit while the turkey rests / is carved / whichever you do. I always have too much to fit in the turkey. -- Don't want any exploding birds -- Bwahahaha! So I have a dish of in-bird and one of out-of-bird stuffing / dressing. The in-bird is definitely more moist and yummy.

    Wayne is taking a nap before going out. Since I have personally experienced him dozing in the tent, I seconded the motion. His buddy claims to doze in the blinds on the days he goes out at 5 A.M. to get the early-bird deer. I fail to see how anyone could fall asleep in a cold, condensation-dripping tent. (Janet, we are going to look for the waterproofing stuff, probably tomorrow since it will be too cold / rainy to hunt.)

    May go to Springfield on Wednesday if the furniture comes in. Bass Pro is having a huge sail but I think it will be far too crowded. I can, however, drool at the thought of the goodies that are on sale. LOLOL.

    Lol Marie, I seem to have the same problem with full freezers. I have 3 of them, and they are full always, no matter how much I try and cook out of them and limit myself from putting stuff in them! Did rick buy turkey ribs so you could eat them? J/K!! :P

    Hi Lori, yes the kids get the whole week off! Our school systems a LONG time ago (when my parents were in school) used to be only Thur. And Fri. They made it a week because so many people were complaining there was not enough time to go out of town if needed. I love it! Michael does shift work, switches from nights to days 1 set per week, 12 hour shifts. Michael works at an oil refinery, what does Bryan do?

    Joce, my parents would probably try to keep the kids even more if Bri wasn't in school lol! They just love having them over :) I think the toy you may be talking about is Scout? There is also a girl version named Violet. It's a good toy for the ages 2-5. Caiden had his old when since right before he was 2 and broke it so I recently just had to go replace it. I think it would be an awesome gift for the toy drive! Both yours and Dens meals sound good to me!!

    I don't think I have the fortitude to sit in a cold, damp tent that early in the morning Karen. :) But biscuits and gravy sound like a nice way to warm up, especially if sausages were involved. :) (I hear about Biscuits and gravy here on ODD all the time but I've never eaten that. I'm sure I would like it) LOL @ getting you started re: the kitchen police. Canada does have, what we call, "Unemployment Insurance". I think the max pay-out is $514/week. Not sure how it works when a person gets a Severance paid out, as Jim does, but he'll look into all of that. We have an appointment with our Financial Advisor all lined up for next week as well as one with a Lawyer just to make sure Jim's pkg. is fair. One must look out for themselves.
    Time will tell if Jim decides to call call it quits on the workforce or not. If I were a betting woman I'd say he'll go find another job. I can't see him being content just to putter around the house at this point. Part time might be an answer.
    Interesting on the salt rub Joce. Can't remember if I mentioned it in here or not, but when we were in the Niagara area back in August my BIL cooked a turkey on the BBQ Rotisserie. My SIL prepared it first and she must have washed the thing for 20 minutes straight. I kid you not. She said her Mom had always brainwashed her to CLEAN the turkey methodically before cooking it which personally I found odd. It's just a big chicken for heavens sakes. Shortly after that I was reading an article online about washing turkeys and the author said that you spread more bacteria around with the water splashing off the turkey and into your sink or onto your counter-tops than you would by 'not' washing your turkey, plus its the job of the oven to cook the bacteria to a temperature where it kills them so washing or no washing they're dead in the oven after that temperature is hit. I didn't bother relaying that information to her . Didn't want to make her feel bad. I'd love a Rib eye steak tonight please. :) Although sausages are yummy too.
    I think that "Scout" toy would be a fantastic idea for the Christmas Angel tree.
    LOL @ two personalities Marie. I love them both. :) And you and Rick have done wonderfully since you both lost your old jobs. And I'd hazard a guess that you are both a lot happier too. :) (And I totally knew you'd be rooting for the deer) :)
    LOL Michelle at the inside stuffing turkey always being over done anyway. That's funny. 3 freezers? Really? Wow! And I've always thought of Joce as the freezer queen. :)

    Generally, a legal severance package here is, 1 weeks pay for every year served up to 26 weeks max. Then after the designated time allotted by EI, Jim can receive EI. They may also pay for courses and other education too? He may have some health benefits covered for a few months. I would look into that as well, just in case and get dental, eyes, prescriptions etc. done while he is still covered by work. Of course we don't have to worry about being covered by OHIP, (Ontario Hospital Insurance Plan) which covers the really big things like hospital bills and doctor bills. All we do is show are card and that is it.

    I LOVE ALTON BROWN!! and I LOVE My Mom's stuffing that goes INSIDE the bird. Ive been eating it for 50 years, and I haven't gotten sick yet. I'm with Karen on the food police! I see peopole throw food out if it's been sitting out for 30 minutes. Seriously people??? (Don't get me started, either). It can sit out for a while before you put it up. It may get a little somethin' somethin' at a certain temp from sitting out...but...you are gonna REHEAT it to the temp that kills that somethin' somethin' anyway. Never been sick from that, either. :) I leave frozen meat, chicken included, in the package in the sink to thaw all day while I'm at work. Never been sick from that, either. OK. I'm stopping now.

    OMG on washing the turkey! That's just hilarious to me.

    Janet, I kinda agree with you on parents being loving and kind. My brother NEVER goes around my dad, at all, unless it's a holiday. And then my sister the princess strong arms him. I can't say I blame him. It's really kinda pitiful, when you see Dad saying "I know he doesn't want to be around me". I wonder if he will admit to himself that it's his own fault...but enough of that. Sounds like you all have things all lined up to be sure you plan well and make the best decisions. Very smart. Unemployment here is based on what you earned in the previous 3 (or 4?) quarters.

    Karen, I'm with Janet on not having the fortitude to sit out in that cold! But I'm all in on the biscuits and gravy. (Janet, we have to get you some biscuits and gravy somme how, some way!). Yes, taking the stuff out and putting it on the platter is what Mom always said, too. As soon as the turkey has rested. I love stuffing. Mom's was different than the dressing. But that whole spiel is on the TG thread, so I won't repeat. I'm long-winded enough as it is. :) LOL @ the exploding turkey. Too much stuffing is a good thing. I love it.

    LOL Marie @ 2 personalities!! I'd be afraid, very afraid, if Bryan were to cook, or bake. Sometimes he offers to "help" and he will get the worst steak knife in the drawer...doesn't even cut butter let alone a steak...to chop onions or potatoes. Gotta love him. Have Rick put the pies on top of a baking sheet to catch the spillage.

    Joce, I love that you are giving to the different organizations! That toy would be a great gift. (Thanks for the info...I have to check it out for my 4 year old grandboy). I always envy Den's Friday night rib-eye. That's my favorite cut! I've seen that rubbing salt on the turkey before on FN, but I think they let it set for a day or tow, then rinsed it...but it sounded more like a flavor/brine thing than cleansing. I have never done the turkey, so I didn't pay close attention.

    Michelle, Bryan works at Kimberly Clark. He runs multi-folder 2. lol It's this gigantic machine that makes the tri-fold paper towels in the restroom dispensers. You really have me wanting ribs. 3 freezers?? #jealous. lol

    My boss and I went to AC Moore today and bought some new decorations for the suite. Love working for the Anti-Dragon Lady! We are also going to have a contest for everyone to decorate their workspace. I am in the front lobby, so I don't really have my own space...so we have to come up with a space for me. lol Can't really count the decorations we bought for the lobby as me decorating my space. The are having a huge sale...made me want to go back and get some Christmas things. I changed my tree decorations a couple of years ago, and bought these pretty beads to use in place of garland...but I only have enough to do half the tree! We have to spread them out and you can't even see them. Can't find any more like them...not really beads...they have presents, and holly, etc, So I'm going to use them somewhere else and find something to replace them for my tree.

    Bryan's on nights, no cooking for me. I want to make my grocery list and do my housework tonight, so I have the weekend free to do some prowling around and go play with my kiddos.

    OH Laurie! Very cool on the JT tickets your friend won! Hil texted me a few weeks ago, she had just found out he was coming to Nashville. I immediately went online to get 2 tickets for her Christmas (or 3 if her boyfriend wanted to go! lol Cause I'd love it!) and it was already sold out! So was the Knoxville show. :(

    Yep, the "kitchen police" are alive and well in the U.S. Closely followed by the safety police who want to remove swing sets from playgrounds. Now, didn't I say don't get me started. LOLOL.

    Biscuits & gravy are great - you can have the sausage. There is plenty in the gravy.

    Here are several recipes on GR - there are others but I thought these sounded more like the real thing. I have never made them, just eaten them in restaurants or at someone's home..

    Country Sausage Gravy For Biscuits has same picture as:

    Country Sawmill Gravy For The Biscuits.

    Sausage Gravy And Biscuits - uses Worcestershire sauce, and:

    Cat Head Biscuits And Sausage Gravy CiMountain Sausage Gravy For Biscuits.

    I cheated and had bacon, eggs, hash-browns, and biscuit with side of gravy instead of toast. And two wonderful cups of HOT coffee.

    Well Wayne must be at the far tent on the top of the hill by now. I better clean the kitchen before it walks away on its own power. And figure something for supper. He has the other 2 way radio so if he needs me for anything he will give a shout. He took the Gator so I will have to bring the pickup if he hollers.

    Awwww on the Gund Teddy Bears Joce. Very nice! I've got an appointment for a dental filling the beginning of Jan. and Jim made an appointment at the Eye Dr. as he's due for a new pr. of glasses so we'll get all that done up before Jim's benefits end mid-Jan.
    LOL Lori @ Bryan getting the worst knife out to cut onions etc. LOL. How fun you went shopping for decorations with your boss. I would totally be into decorating my workspace.

    Can't figure out dinner. Took some chili out of the freezer and wanted Chili dogs but of course I have no hot dogs and don't feel like running to the store. I do have a can of salmon in the pantry I could turn into sandwiches or we may just grab something quick on the way in. Jim doesn't really feel like going out tonight but I think it might be a good thing just to get his mind off of things.

    Joce, ditto on the deer:) I like shooting them with my camera...my grandparents hunted deer..so I have been around it. Also, if people don't hunt, there's overpopulation of deer and they could starve..but, I'm with you..I couldn't do it..pull the trigger..nope..not me:)

    We got a game camera video of a dog chasing a deer on our place. It is obviously well fed, owned but I don't know whose.. The only neighbors who have one that distinctive color have a short haired lab mix and this dude is long haired and shorter legged.

    Wayne is good at cooking but he sort of forgets to clean up after himself. So many times I sweep crumbs and clean up grease -- it must be a man thing.

    It is 4:45 and I did hear a shot, but it was pretty far away and not in the direction he was planning on hunting. He has until 5:20 to legally take a deer. It feels COLD out there - I just got back from feeding the outside cats - because of the humidity. Time to stay inside
