Good Morning Monday

    Hello Out there all you sleepy heads. Time to rise and shine. Okay, no shine here in Orlando. Rained and lightening all night. Sure was good sleeping until I remembered I had to get up as this was a work day for me. Oh well..

    This evening will be patty melts I think. I'm keeping it simple as I want to cram in a bunch of house chores before evening raids. I don't want to get slaughtered doing the trimming and tyding up for the weekend party all in one day.

    Just read all the posts last night about Sonic. LOL No, you don't go to Sonic for the food, especially the burgers, BUT the Cherry Limeade etc is the bomb! And the ice cream, the shakes, etc. My daughter loves the chicken strip dinner, though. Chicken strips, white gravy, fries and a piece of texas toast. She loves it!

    Leftovers for us tonight. Have some pork tenderloin and veggies left, will probably make us a small salad to go with.

    I know Ang, I'm hungry too. Trying to eat my leftover SW chicken chowder for lunch, but I got it too damn hot in the nuker!

    I think I'm stuffing poblanos for dinner with all the leftovers: rice, some pork, might throw in the taco meat too! LOL and cheese of course, and some hot El Pato. That's the plan anyway.... Have a nice day all!

    Figured I'd do tomato soup and grilled cheese...He can handle that if I cut it up small.

    Hope Les is doing better. Do they have him rinsing his mouth with an antibiotic rinse or warm salt water? That really heals things quickly. I'm with Les when it comes to mashed potatoes and gravy - where's the beef (or chicken)???

    It is strangely warm out too - 76ยบ with warm winds. Those patty melts do sound good, and no I haven't had those.
    Happy no cooking, Val, and the game.
    Yeah, Wynne, Brad would be wanting the meat too!

    Came home and started cleaning and dealing with lawyers and Podunk, TN court clerks who don't know their a$$ from a hole in the ground. Picked up TBO and got him to work....gah already!

    Making King Ranch Chicken casserole over here tonight. Serving with Mexican rice and green beans. Small portions for me and it's dinner in TN.

    Yummm, King Ranch Casserole. I have about 5 chicken legs I need to do something with the meat...might just make up a little one to go with the other leftovers we are going to have tomorrow night.

    Y'all have to try this version of King Ranch! Basically, it's just cream of chicken, cream of mushroom, fried onion, cooked chicken, lots of cheese and of course---lots of tortilla chips on the bottom, can of Rotel ( I used mild). (Hubbs can't take the heat) LOL

    1 can cream chicken
    1 can cream mushroom
    1 (small) onion, diced & fried
    2-3 cups diced or shredded cooked chicken meat
    1 can rotel (tomatoes diced with chiles)
    2 cups cheddar or Mexican blend shredded cheese
    1 12-14 oz bag tortilla chips (or you can sub torn up tortillas if you prefer)
    Seasonings to taste

    Have chicken meat boiled, and either shredded or diced finely.

    Mix together the soups, cooked onion and rotel. Break up tortilla chips into reasonable pieces and layer about half on bottom of sprayed 13x9 glass baking dish.

    Layer on half of chicken and half of soup mixture, then half of cheese. Repeat until all ingredients but cheese are used. Top with cheese and (if you like) green pepper chunks--or more hot peppers if you like hot stuff.

    Bake on 350 for about 25 minutes, or until really hot, bubbly and slightly browned on top. Let sit for 5 mins before serving.

    It's 43 pounds down now. A few more pounds and I will be able to fit into the lowest size jeans I have in the closet---so that is a cool thing.

    I can't imagine that it's working, but so far, every month I've lost more than I would have thought, ha!
