Manic Monday!

    Good Morning Everyone! Goodness. It`s already been a busy morning. Did you sleep better last night Linda? Hope so.

    I woke up again at 5:50 a.m. and had a hard time falling back asleep as it was sunny and the birds were singing, but I did manage to and I actually slept `til 9!!!!!! And our house sitter arrived at 10 to meet with us about all she needs to watch over while we`re on vacation. I barely got my second cup of coffee!

    Had brekkie once she left. Toasted bagels filled with a fried egg, ham and cheese. Very good. Very messy.

    Today is your swim with the Dolphins day I think Michelle! How exciting. I`ve never done anything like that.

    I`ve got potatoes baking in the oven and I`m trying to prep dinner a bit. My menu for this evening is Prime Rib which Jim is going to cook on the BBQ on indirect. I think I`ll put a steak rub on the outside and just mix up a pkg. of Au jus or Demi glace to drizzle over once it`s done. I`m serving
    Twice Baked Spinach Potatoes
    on the side with bacon pieces instead of spinach, and I`m also going to make
    Garlic Baked Shrimp
    on the side as I`m worried my Prime Rib isn`t overly large. Going to slice up some beets and drizzle them with an aged balsamic vinegar, some crumbled feta and maybe some toasted sunflower seeds. I`ve got Blueberries with Limoncello for dessert if anyone is still hungry.

    I am going to brine two chickens this afternoon as well for tomorrow night`s dinner.

    I`ve swept the back deck off and Jim is going to do the back interlock for me. He`s already done some mulching and watering.

    I feel scattered but I think I`m okay for time. Our guests show up around 3 this afternoon from Toronto. We have to go pick them up at the bus station.

    I did sleep better last night Janet, thank you for asking. Was busy this morning taking care of some things. Also made a pot of chicken rice soup for DH for lunch and for myself I made an orzo salad with feta, spinach, red onion, and marinated artichoke hearts. I added some shredded chicken to it that I poached for the soup for protein. LD loves when I poach chicken, he knows he'll get some too.
    Just a usual day here. Will go to the gym later and swing in the grocery store after. Not sure what I'll be making for dinner. I'll pick up something at the store to cook on the grill.

    Sounds like you are all ready for your company Janet. Delicious menu!! Oh my on waking up so early but glad you were able to fall back asleep. Perhaps you are feeling scattered because you will be taking a trip yourself and will be away from home. Having a house sitter though should give you some peace of mind. How long will you be away?

    The 'Bird Pepper' plant I bought and potted has been doing well. I'm always getting peppers and when they turn red they seem to "disappear" meaning the birds are partaking which makes me happy. I just may get another.

Yes, between company arriving, my Mom in hospital, heading to Montreal Thursday and then vacation next week, my mind is reeling. We`ll be in Rainy River 3-4 weeks. Fun on your bird pepper plant doing well. I planted something similar. I`ve been harvesting jalopenos from my jalopeno plant but haven`t gotten anything off of the smaller pepper plant yet. I should really go check it out. That`s neat the birds like them. You`d think peppers would be too hot for them?

    I prepped the brine mixture for tomorrow night`s chickens and made room for the two buckets in my fridge which wasn`t an easy task. I`ve made up the Twice baked potatoes and peeled the shrimp although I don`t have enough so am going to have to pick up another bag on the way home.

    Good for LD getting chicken pieces! He must be one happy dog. I must Google Bird peppers!

    Had one dish sausage orzo meal from Hello Fresh. I do appreciate not have a zillion pans to wash.
