Monday madness!

    Yep--it's Monday. Which means I have a huge order to deliver today at 1:00---so the in-cabin guests can arrive with all their prepped foods ready after 3:00.

    I am SO exhausted, y'all. Cody's first day back to school today, this order--been cooking since 6:00 a.m. yesterday--a full day's shopping/gathering supplies before that. Gah.

    Oh well--by 3:00 p.m., I'll be back home and then it's time for the COUCH! LOL

    Dinner tonight is something heatable from whatever I've been making, LOL.

    tonight I am making rigatoni with sweet sausage tomato sauce from the Soprano's cookbook. A friend gave it to me and hubby picked that out. looks similar to other dishes I make just fewer ingredients.
    gonna clean this house and do laundry then its poolside.

    It's really hot and humid here today....I HATE HEAT!!!!....Gonna throw some T bones on the grill for supper..then maybe some potato planks and do some microwave veggies...Try to keep the house cool.

    My ribs were perfect last night (if I say so myself! LOL) Their son (11 yrs old) gave them the approval, seems how that's his favorite thing. Her daughter is sweet and both kids are very well mannered. Nice to see these days. We played bocce ball - boys against girls - they won of course, but no one cared, just had fun. I'm glad I didn't make the pasta salad as well as the potato salad, come to find out, her son and husband don't eat it. Son just had ribs only, no beans either... Daughter eats like a bird.... no beans leftover thank goodness, just 4 ribs left, and a small amount of potato salad, which I just might finish up for lunch. I ended up making a no bake pie that I threw together at the last minute - I was determined not to use the oven, so this is what I did: Took some vanilla wafers and crushed them to bits, added some melted butter and pressed into the bottom of pie pan. Melted some choc chips in microwave, added block of cream cheese, sweetened condensed milk and some vanilla and poured into crust, chilled, kids loved it, so did the men - friend and I didn't have any. Ended up dancing in the kitchen (just her and I) A little too many martinis..... But I feel okay now.

    I think I might do burgers as well Pat.

    Tonight I'm doing Smoky Mountain Chicken My Way, (posted), playing with a new potato salad idea floating around in my head, and baked beans.

    And now it's back to throwing out, packing, making calls to have signs re-quoted, extra shred box pick-up, etc...ahh, the joys of moving! lol

Then again, it could be my slight hangover ..............

    Ang, stew from swiss steak sounds doable.... Hope your power stays on.

    Decided I'll save the burgers for when it heats up tomorrow or Wednesday. Gonna probably do my old stand-by: Chile de Arbol Chicken, maybe with the leftover potato salad. Gonna run to the store though, out of the de Arbol salsa - It's a bloody miracle I haven't self-exploded with all the chiles/spiciness I eat!

    Seriously! I haven't a clue. Every little nap I took woke up in a large drool puddle on my pillow. It's not so bad tonight after a shower and a shave and a huge bowl of minestrone. My mug is relatively salt free.
