    Tonight is the Annual Holiday Celebration for Southern Technical College. This is the school system where my husband is executive vice president in charge of licensing and accreditation for the schools. This years gathering is quite special as it marks many milestones for the schools systems growth in the central Florida area.

    The party is being held at Rosen Shingle Creek Resort. My company, WELBRO Building Corporation completed Rosen Shingle Creek Resort in 2007 and it won our company many awards for its execution. It really is a lovely venue for any gathering and I have been too many since its opening including the wedding of WELBRO's HR director to Rosen's project manager. Next week I'll be back at the same resort for a CIO conference being conducted over two days.

    Eating healthy during this time of year can really be a challange. But I've found that if you are creative with the typical buffets presented during these affairs you can really do quite well. A regular offering is a sandwich build buffet that has meat, bread, cheese and veggies of some variety. Skip the bread and cheese and you can make a very light salad from the veggies and lean sandwich meats. If they offer a hot dish buffet there are generally veggies, fish, chicken, starch, gravy, salad, breads. Well same thing -- skip the starch and you are good to go.

    I have found that the better the resort the better the healthier the food. At the finest resorts the buffets will have very light fare, well seasoned and cooked. They present variety which includes lots of fresh foods with complementing tastes. Their chefs see no need to bury the goodness in heavy sauces, cheeses, gravies and dressings. I learn alot from those spreads.
