Spot on Sunday!

  • chuckieb 8 years ago
Good Morning Everyone! Here's hoping you all have a Spot On Sunday! It's VERY blustery here. After breakfast I'll head out and do up my Christmas decorating and hope it won't all blow away!
Pic below of the Lobster Bisque I made last night. Unfortunately it WAS NOT spot on. :) Jim really enjoyed it and reminded me that Lobster has a 'delicate' flavour, but I thought it just didn't have the depth of flavour I was looking for and I felt something was missing. I got the recipe years and years ago from the woman who used to run "The Hungry Planet" restaurant in Perth where Joce is from. She's an incredible cook. I've made this before but this time for whatever reason it was just lacking something. She actually says to run the shells through a food processor and then strain but I didn't do that part this time as I was making a heck of a mess already, and....lobster shells are sharp and they hurt. :) So maybe that's where I went wrong although I did google other lobster bisque recipes online and everyone else just seemed to strain the shells and not whirl them through the food processor. Anyway....I want to try it again before I post the recipe as I want it to be just 'right'. :)
Sens won 4-0 last night so the evening ended on a high! :)
I slept in 'til 7:30 this morning so that too was good.
That asparagus recipe sounds wonderful Bren. Do you have it posted? Wow on your deal on salmon. That was an excellent price. The sea bass on the other hand. :( Before I forget...was it you that was looking for a good price on Cornish Game Hens? If so, I bought three yesterday at Sobey's. They're on for $8.80/kg. The three I picked up were all around $6-$6.49 each. Perhaps I should have used a seafood stock instead of water in the Bisque recipe. Can you freeze the seafood stock? I expect so eh?
    Making
    Jamie Olivers Chicken Korma
    for dinner this evening.
    Wishing everyone the 'bestest' day.

Good morning Janet! So glad the Sens won:) Your lobster bisque looks divine..too bad it wasn't spot on:( After all that work:( I wouldn't run the shells thru the processor either..what a pain!

Bren, cool on the seafood stock! Which recipe were you speaking of? I only have one seafood type of recipe posted, Ricks Cioppino , was that the recipe? Maybe you were thinking of someone else? Sorry for all the questions, I've been up a while and need another cuppa coffee:)
BTW, how do you make your seafood stock? I have always wanted to try making my own:)

Tacos for dinner..we have plenty of leftover Chinese food for our game day food:) That's pretty weird..Chinese food and Mexican food..oh well:)

Well, need to just a tad bit of office work this am..I HAVE to go to real work tomorrow and help Rick install 2 small curtain doors in a local church's kitchen..hope he behaves himself and all goes well..you probably have noticed constructions workers and their language at times when something doesn't go right:) Glad there will only be one person there to open up and her office is far far away:)

    Have a lovely Sunday all:)

Morning Marie! I've been chatting with some people online and they think the reason my bisque wasn't perfect is because I didn't run the shells through the food processor. :( Argh. I think Bren probably just got me and you mixed up. Yum on Mexican and Chinese. That's called Fusion! LOLOLOL. We'll go with that anyway. Enjoy your game. LOL @ watching Rick's language at the Church tomorrow. I'm sure he'll be on his best behaviour.
Made an omelette for brekkie with mushrooms, onions, cherry tomatoes and peameal bacon. Very yummy. Should head outside but....
    Baby....it's cold out there!!!!!!

Well, that sounds like a lot of work processing the shells..can it really make that much of a difference in taste?
I was thinking the same think, Bren was thinking of the lobster bisque! I am so wanting to make my own seafood stock, that would make such a difference in all kinds of seafood soup..homemade stock:) Rick wants to make his Cioppino for Christmas and that would be awesome to have homemade stock...
Is it supposed to warm up any today? We've been in the 60's here, supposed to get below freezing around Thanksgiving..we hardly ever get below 25F here...and that's not often..thank goodness!!!

I have never heard of using the lobster shells ground up in a soup. Your pic looks lovely and and yummy. I am pretty sure you could freeze seafood stock. It was a really great game last night and I was delighted the Sens Shut them Out. Wait for a warmer day to do the things you need to do outside it is indeed a chilly blustery day out there! Your breakfast sounds SO good!

LOL@ Rick's construction language:) Den would be doing the same thing. Nothing wrong with Chinese and Mexican for game food at all!
Dong laundry today and we are having prime rib roast with all the fixing including Yorkshire Pudding
Hoping everyone has a nice day!

I was hoping not Marie. :) I think homemade seafood stock would be fun to make as well and you're absolutely right...it'd be great in Rick's Cioppino. It's 4C/39F here at the moment and supposed to drop to 3C/37F by the afternoon.
There you are Joce. I was starting to worry. :) No, I'm not going to wait for a warmer day. I'm Canadian, I can handle it. :) Honestly, after dealing with heat rash and 30C/86F temperatures in Taiwan all the time we were there I'm actually quite pleased with a breath of fresh air as it were. :) Plus...I have only 8 days before we head off to Rainy River and I have SO much still to do in order to get prepared for Christmas and my Mom's party, etc.etc. Aw .....you're killin' me AGAIN with your Prime rib and Yorkshire pudding. Sighhhhhh......

Hi Joce! Somehow I feel better about Rick's construction language now that I know Den does the same:) LOL

Janet, I KNOW! Homemade stock rocks:) I have noticed some stock recipes where it calls for fish heads..Homey don't do that..just a little too much "seafood" for me..eyeballs and all..can't do it.

Wonder if we made it to page 1 of Groups yet? Why is this so important to me? LOL

    Happy Sunday afternoon everyone.

Yes, I did mean Janet, not Marie. Sorry about the mixup.
I don't have the stock recipe in my RB, this is the one that I used: http://www.simplyrecipes.com/recipes/how_to_make_shellfish_stock/. Whenever I have shellfish I save and freeze the shells. That's what I used to make the stock.
Beautiful photo Janet. Yes, I was looking for cornish hens. I'll look for a Sobey's,
Running the shells through the food processor seems a bit odd.
The hungry Planet was mentioned in our local paper recently, I can't remember why.
This is my recipe for asparagus: Asparagus With Toasted Seeds

LOL about how construction works talk Marie. Joe had a little painting company, still does a little work, so I know what you mean.

I have to get at the laundry too. I wish that the laundry was on the main floor, it's not easy lugging it up and down three sets of stairs.

Jess is coming for dinner so I'm making a stir-fry.

    Have a great day!!!

Woke up to a white winter wonderland today...very pretty. I am currently going through a Lupus flare and am on high doses of Prednisone, so will be off work for a few weeks at least. Maybe will do a bit of over the top Christmas decorating to keep myself busy.
On the menu tonight. Turkey salsbury steak, mashed potatoes with chives, broccoli with parm and lemon pepper, garlic bread with cheese and kale and leaf lettuce salad with red onion, tomatoes and vinagrette. Have a wonderful day all.

Yeah! We are finally on the first page!
I don't envy you having to lug laundry especially three flights of stairs, Bren. Glad we were planning for our old age with this house. It is a bungalow. Thanks for the links:)
Sorry to hear about your Lupus flare up, Wendy. What a bummer! I have a friend with Lupus, one day she is walking and doing just fine and then she has to use a walker to get around. Not a nice disease at all! Your dinner sounds Yummy! Yes lots of snow down in your area. Fortunately none called for us this week. Much too early for me!

Lupus has been pretty good lately. Picked up a virus at work. My immune system went into overdrive. Joints started to swell, cramps in hands for hours. lots of rashes. Prednisone is helping, but the drug side effects are awful. One day at a time. Just happy I can use my hands again. Hard to sleep, so hubby has been downloading some very cool documentaries for me to watch on those nights where i can't sleep.

Jim lets out choice words when a project he's working on is giving him problems as well Marie. In fact.....I probably let out more choice words on a more regular basis than he does. Jus' sayin. :) I know what you mean about feeling squeamish about adding fish heads to a soup broth, but....after being in Taiwan for a month, where the whole fish is served in its entirety, I'm not so squeamish anymore, plus.....fish heads, and yes, I have seen them in the stores....are a lot cheaper than the whole thing and would have an equal if not better flavour. I'll go for the fish heads if they're called for. :)
Thanks for the link to the stock Bren. I pinned it. I see they recommend cutting up the shells with a knife or banging them smaller with a hammer. :) The Hungry Planet went out of business (the owner's choice, not a matter of no business) quite a few years ago. Thanks too for your asparagus recipe. I'm so going to try that. Where do you get your pumpkin seeds? A bulk store? I'm guessing Jess is your daughter? Stir fry sounds good. My hubby LOVES them and I don't make them all that often as I don't feel I do the greatest job.
Christmas decorating sounds fun Wendy but don't push it. Sorry to hear about the Lupus flare up. Feel better soon. It sounds awful and I'd be a basket case if I couldn't sleep. Nice of hubby to download some good stuff for you to watch. Your dinner sounds lovely although I admit to strongly disliking broccoli and kale, but the rest sounds fabulous. :)
I did one load of laundry (one flight of stairs to the basement) :), and got all the Christmas decorating pretty much done outside. Need to run to the Dollar store tomorrow and pick up a few big red bows and another wreath hanger.
Leftovers for lunch and then I'll start prepping the Chicken Korma.

Sorry you don't like kale or broccoli janet. Grew up in the country,,,,major vegies. can remember hating broccoli for a while . was little and noticed all these bugs in the broccoli when picking it. dad would (to get rid of the bugs) soak it in salt water. still....was off broccoli for a while.! lol

LOLOL Wendy! That's EXACTLY why I don't like broccoli. My Mom used to grow it in the garden, then she'd cut it off, bring it inside, and then soak it in salt water on the counter....and then I'd see these HORRIBLE green fat slugs/bugs that were EXACTLY the same colour as the broccoli float to the top. And I'd NEVER be sure if all the broccoli bugs were totally off of it or....if I'd be eating them without knowing. ARGH. It's enough to give a person nightmares. :)

Hi Wendy, so good to see you:) Sorry about your Lupus flare up..you take good care..glad to hear you have some time off from work..relax when you can and enjoy the Christmas decorating dear:)
I adore turkey salisbury steak, especially with mashed potatoes and gravy..pure comfort food:)

Janet, I have to admit I'm a potty mouth too...only around Rick so no one else knows..it's our little secret, k? LOL
I have heard in order to have an outstanding seafood/fish stock, you have to use fish heads..I don't think I have ever seen fish heads in a store..probably cause of where I live.

Waving hand, guilty of the potty mouth when riled.

Ewwww, I remember that broccoli. I couldn't eat it for years.

Janet, about the shells. I didn't cut them up. I left them in the zip lock bag and whacked them with the rolling pin. Some of the pieces were large but I don't think that it made a difference.

I get all of my herbs, spices and nuts at the Bulk Barn. Really cheap.

I hope that you enjoy the asparagus and yes, Jess is our daughter.

Great info on zip locking the shells and whacking them! That also sounds like lots of fun:)

LOL @ all the potty mouths. And you're right Marie....no one other than Jim (and a guy I worked with for 25 years) has any idea of the language I use on occasion. Plus I look innocent, so that gives me an extra edge. :) We're landlocked here in Ottawa too but perhaps because the store chops the heads off the whole fish they get in to display and package they pkg. up the heads on occasion to sell. Plus I know I can also get them at the Chinese grocers.
Turkey salisbury steak does sound yummy.
Cheers Joce! Jim's watching football right now, which bores the heck out of me, (sorry football fans) and we are having a nice glass of Chardonnay before dinner.
Bren....you ain't seen nothing if you think this is a long post thread! :) The longest since I've been here was over 100 posts. We were having a 'virtual' pool party and everyone was popping in to 'splash'. LOLOLOL. Good times. I'll look for pumpkin seeds next time we're at the Bulk Barn then. Have never seen them in the grocery store. I love poking about Bulk Barn.

I could go on for quite some time on my reasons for hating broccoli. It's a texture thing too. Those little gnarly bits on top. What's up with that? And the pungent flavour? It's not nice. It's really not. :) And my Mom used to serve it and cauliflower cooked to floppy with cheese whiz poured over it. Bleck. Shudder. Squeal. :)

You know me and my memory Marie. Some day when I'm bored I'll look through and find it.
Speaking of which, Lori was on FB and saying that last Thanksgiving she was in charge of making the turkey gravy even though someone else was bringing the turkey and she asked us what she should do and whatever it was we said, it worked out....but now she can't remember what she did. LOL. :) If anyone remembers speak up. I don't. :)
Ya....the over 100 posts was a few years ago. I know Pat was still alive and I'm pretty sure both Laurie and Ang participated and I want to say Tina too.

I remember Lori asking that Janet! I also can't remember what we said..I personally would make a smaller turkey ahead of time (good to have leftovers if you go elsewhere for TG) and use the pan drippings..a shortcut would be to use chicken broth or veg broth. Do them make turkey broth?
Awwww, those were the days weren't they..Pat was such fun:)

Wow it hasn't been. This busy here in awhile. Can I just tell you that being in charge or grown women is harder than you may think! Lol I feel like I am back in high school with my new job ! She said this, she got more samples than me to give out. Other than that I like it.
Sorry to hear about the lupis flare up. I've been on prednisone myself and the side affects are not pleasant but it does make you feel better.

We had roast and loaded baked potato for dinner
I have been known to have a potty mouth but believe it or not it's my mom that has the potty mouth.

Hi all! Just popping in to let you all know I'm alive lol :) had a busy past couple of days. I'd love to respond to this whole thread, but with 33 replies I think I'll pass, I'll skim through in a bit though :)

Yesterday was supposed to be Caiden's last game but of course it got rained out :( That makes 5 rained out games out of 12 and no make ups. We did however get our whole team to meet up at Cici's at the same time the game would be for pizza and for the coach to hand out trophies. I brought cupcakes and a gift card to Cabella's for the Coach that all the parent's pitched in on. It was fun, but crazy! The team we were supposed to play came as well (Coach is friends with their Coach) and we had about 40-50 people there (24 of them kids). Poor Cici's lol! We took up almost the whole place. Anyway, glad it's over haha :)

Today was Thanksgiving at my Mom's. It was nice and after we ate we played Mexican Train (a LONG domino game) that took us about 3-4 hours to play lol! Since it's Thanksgiving break the kids stayed and my Mom will bring them back Wednesday. Just got home about an hour ago and now we are watching Bones on the DVR and I'm having a vodka and club soda with lime. Michael is having Crown and water (blech) and enjoying the quietness :) Sweet Dreams everyone and I'll "see" y'all tomorrow!

Hi everyone. It is good to see a long post today.

I guess if keeping "first page" status is important, we will have to keep on posting. It is sort of like sitting in the same pew at church every Sunday. ODD is a pleasant site to chat, and yes, I do feel like I "know" everyone. [GRIN]

(Speaking of potty mouths, I don't really have one- just an occasional expletive deleted...ha ha ha.)

I hope you feel better soon, Wendy. (I'm Karen, by the way.) If sleep eludes me, I either mess around on the computer or read or look for old Lone Ranger, etc., re-runs on TV. Sometimes after watching TV for a couple hours, sleep looks pretty good. At the moment I am watching Alaska-the Last Frontier...totally addicted to it.

Here in MO, seafood is imported -- or frozen. No fish head anything. Although the old Iron Chef series seemed to us it a lot. I'm the world's worse gravy maker, not one of my greater talents.

We have the deer all hided and in the refrigerator ready to wrap and / or grind tomorrow. Too tired to prep it tonight, or to cook, so we had hamburgers. The venison meatloaf was okay yesterday but the end result would better with a finer grind. I wrote it down just in case the next time, with a finer grind and some minor adjustments, turns out to be better. Maybe I will wait to post it then so people don't have to try a not-so-great recipe.

We took the veggie tray and the homemade honey mustard dip to the family who lost their little girl. They are coping well. We will go to the "visitation." The school is going to be closed so those who wish can attend the funeral. It is so sad.

It is about 37F outside, supposed to drop down to 20F tonight. We have a small infra red heater going in the LR. Not ready to use the electric furnace, just yet. It raises our electric bill to over $400.00. (The wood burning stove needs to be cleaned before we can use it.) We have a "curtain" at the end of the hall, which helps the heater, but both of us have cats on our laps so the compromise was that the first one whose cat moves will lower the curtain.

    Have a nice rest-of-the-day.
