Super Duper Saturday

Hi Gang! Just went back to read and catch up for the last few days. Funny, I really missed this group the last few days. I'm right there with ya Tina, this group of friends helps my sanity along, too!

Ang - I hope Steve's friend is OK. He does have his good qualities, doesn't he? ; )

Wynne, I saw that you had spent some time with the boys! Soo happy for you!

    Ooops...premature submitting again!

So, we are in the door at the new office. Yesterday was sooo chaotic. Talk about frustration. YES, I'm gonna vent here! lol So, as you know, I have been packing the office for ages. Everything was labeled and grouped together to make the move more organized, considereing our phones were going down at 4 on Thurs, and we only had a couple of hours of non-open time. ANYWAY, a couple of guys from the main office were to help us (they do this for the TN branches). The company pays them $50 an hour to do this, in addition to their salaries (it's the IT guy and the marketing guy, so the salaries are not too shabby). They were supposed to rent a u-haul truck. We were just moving two miles down the hwy. 5 offices, conference room, file room, etc. But, a u-haul truck would have done one load. They get there with the tiniest trailer I have ever seen! Brad, one of the loan officers, says "My 10 year old so n has a trailer bigger than that!" And I said "Yeah, and it's red and has a long black handle on it!" My manager should have sent them back for a truck. So, it takes them from 8 am til 5 pm to move everything!! I'm at the new office all day, answering phones, and trying to unpack as they move stuff in. The idiots. They brought in BOXES of files, and put them in the new file room. TWO TRIPS LATER they bring file cabinets. Guess who has to move all those friggin boxes of files while fthey stand there with the filing cabinets strapped to the dolly? OMG...it was that way ALL friggin day! STILL haven't unpacked my desk, get to go do that today. We need to be up and running tomorrow. IT guy was leaving to go to memphis, he's coming in Sunday to hook up computers. We had 2 empty offices with computers. The pricessor was off, cause she couldn't work, and she's pregnant so she didn't need to help us move. Anyway, they didn't want us to pack up the computesr, they wanted to do it. They idiot marketing dude threw her computer, keyboard, mouse, etc, in with the stuff from the two other computers. They wanted ME to figure out what sutff was hers...yeah, right. DIDN"T happen.

And sorry, but one more vent. My boss, is so technology challened. Last week, our IT dept goes in to the new office to add data ports. She hooks to the network via wireless laptop. She goes to all of our offices, and decides where our computers will be, and tells them where to add the dataports. NONE of them were where they really should be! Everyone else can make theirs work, cause they have free standing desks. Mine is out front in the lobby, and it's a built-in counter top type thing, with another coupter about 10 inches above it for clients to come to. (Kinda like at the dr. office). So, anyway, on the far right is the one hole in the desktop for computer cords, and the one plug below the counter. Obviously the only place for a computer. She decided I should have my computer on the left of the counter, and had the data port added above my desk, on the left. So, Iget to stare at a data port and cords running across the length of my desk every day! lol

On the upside, the offices are very very nice, very very big, and it's a definate step up in the world, and a better environment all the way around. Sorry for the mega-post! Couldn't vent about that to anyone at work. My boss, the other loan officer, and their assitant are all best friends. So, no venting at work, especially about the boss's bad dataport decisions. (she had them add the one for the fax/scanner/copier to the opposite wall from where she wanted the copier). BUT, the IT people should have pointed these things out to her, too. Not really her fault.

OK...I'm done. Gonna take my big girl pill now. lol

Not sure what I will have today. Gonna peruse GR and see what I can come up with. Which means I will be BACK to post again!! (Are you SURE you missed me?). lol

Roused mother early this morning to go to market and see what kind of fleas others were selling. Returned with a watermelon and muskmelon. Several folks that were brandishing their wares at the farmers market yesterday were displaying same at the flea market today.

Nice cool morning in the mid 60s. Might hit the high 50s tomorrow. Nice couple of mornings for the middle of August.

Still scratching my hairy skin on what to make today.

Vent away, Lori....it is quite all right.
I think my post would have been even longer!!!

Tonight is the Woodstock party at Liv's work....they are having a costume contest ! Best looking Hippie get up wins a prize....bra burning at 10 p.m., they are passing out free bologna sandwiches...and making brownies with dried parsley sprinkled on top.
Liv wanted me to get a muumuu and go as Mama Cass Elliott....I'd have to get a wig. We dug through Fred's closet and he had enough tie dye to outift most of the wait staff.
Looking at the bank balance this a.m.....I don't think we can afford this shin-dig.
I'll ask Liv to take pictures so I can at least see some of the fun.

Will make last night's planned dinner tonight. I'll mix while sleeping beauty and ever-sleeping hubby snooze away the morning. They can't argue when it is already in the loaf pan. So there!!!

LOL Tina! They sound so typical. I have learned to not let anyone know what's for supper. I used to be crazy enough to say "what do you want for dinner?" "Oh, I don't know, whatever you want to fix" "OK, how about so-and-so-which-may-be-your-favorite-meal-of-all-time?" "No, I don't want THAT today..." AAAAHHHHHH lol

The party sounds like a blast! Wish you could go. Do you have a scarf to tie around your head? No wig needed! I hope you come up with something!

I'm bouncing all over the place on what to fix for dinner. Chicken something. Imagine that! lol Something mexican-ish, and in the crock pot. And I know we have a multitude of recipes like that, that various group members have tried and raved about. Can't find anything. Not nary a thing. I have a couple like that posted, but, wanted to see someone else's slant on it. May just go in there and get my mad scientist groove on and start pitchin stuff in...lol...already threatened to take my big girl pill with vodka this morning...it's 5 oclock somewhere, after all. May just do that and get to gettin'!

    CHEERS!

Oh my maude, Lori. HOW FRUSTRATING! (Downright maddening!) I can't believe you didn't cuss 'em all out. I might have. Wow--well, soon it will be over and y'all will be settled in. NOT for a lack of madness, though!

We are going out tonight to The Old Mill restaurant up in Pigeon Forge. Never been there, and we are looking forward to it. Some dear friends from MS are up here in one of the luxury chalets for a week---they're meeting us for dinner. Good times.

Nacho--you're not alone on the budget. We've been broke as a joke for a while now. His extra work has slacked off and mine is on sabbatical. We shouldn't be going out tonight, but being as it's been three months since we've BEEN out--we're going and that's that.

LeClare--How do you do your tater sammiches? Do tell!

Points--Love the flea markets. Did you sell any jelly?

Gosh it's good to be NOT delivering today on a Saturday! Wooo!

Enjoy The Mill, Judy! Haven't been there in a while...good comfort food! And love their "little" shop!

Tina, you are a doll. Thanks for helping me with the recipes. I'm gonna do the slow cooker chicken taco filling (may not be the exact right name) that you opinted out and posted to the group...the one that Ang loves. I don't have tomato sauce, but, I think I can sub salsa. I'm gonna try my hand at a black bean and corn salsa to go with it. Never made one, but I can iether figure it out or find a recipe! I really should drive to the office and unpack my desk...but, then, I could go in early Monday and do it...eay, that's the ticket! Monday. wooohoo. Another problem solved. Now, c'mon Tina, we need to conquer that healthcare debaucle...lol

It is, by golly, turning into a super duper Saturday. Was gassing up the mower, getting it ready for the lawns weekly hair cut and there was just a bit of dew still on the blades. So I offered to haul mother over to the do it yourself store for a couple bags of soil for the project she's involved with. By that time the grass would be just perfect for mowing.

I have already been reminded that she has not had any breakfast or her pills for the third time now. I tried to score her a croissant breakfast sandwich for a buck but was 5 minutes too late for breakfast service. Heading for home with empty stomachs, I pulled into a little eatery I hadn't been inside before. It was formerly a Mexican diner and under new management for a couple of different times. I had often rubber-necked at it while driving down the road but never stopped in. The OPEN neon was blaring as we rode by and the car did a U-turn to wind up in their parking lot.

A nice small clean eatery with a couple/three tables occupied. I had a Philly cheesesteak while mother had a pancake and a couple of scrambled eggs. The couple sitting in the corner under the LIARS TABLE sign, for whatever reason, picked up our tab as they were leaving. The waitress dutifully informed us, after the patrons left. I thanked the waitress and don't you know, now I'm required to leave a tip lest I be viewed in all sorts of untoward colored light and never be able to go back there again. But the food and service was good and the price was right. Only one waitress clad in shorts and form fitting clothes. She was hustling and parts were giggling around and I was sitting there with my mother trying not to leer so she could tell. A tip and a thanks and we were down the road again with our sacs of soil.

Now on to a nice nap to let breakfast settle then on to my grass cutting steed.

You scored Points! Of course you HAVE to tip, afterall the meal was free! And I'm glad you were subtly 'leering' - LOL
It's mid 60's here to, nice and mild, but sunny.

Good to have you back, Lori. And glad your move's over (well almost) What an ordeal! That slow cooker chicken with salsa sounds like a good deal.

Pat, that sandwich sounds to die for...

Tina, that Woodstock party sounds like it would be hilarious! you should go, if at all possible. Like Lori said just tie a head band around your head. And yeah, go ahead and make your tuna loaf. I'm with Lori about not giving them a choice - bite's you in the a@@ every time.

Judy, glad you have the day free, and enjoy your dinner out! I hear ya on the broke thing all too well....

Wynne, what's this Grandma's sauce Pat is talking about? Is it posted? Yeah, make your soup...

I went to Costco this morning - scored the BEST parking spot ever! Woohoo Kept it just under $200, but got a lot of good food. They had panko crusted tilapia (frozen) gonna be using that for fish tacos one time next week. Also got some more filet mignons (cuz we have to have one luxury in our broke pathetic existence lately!) But really when you consider the whole 4-pack is only about $26 that's not bad considering it costs $32 or more at a steak house for ONE! How's that for rationalizing! LOL I ended up making lasagna last night - pretty good for on the fly... Brad's working today, not sure whether I want to grill the steaks, or make these little empanadas I've been wanting to try. I love when the pantry, fridge, basement is stocked to the GILLS!

it Raviolis and a quick marinara sauce here tonight.
Cooking up a storm tommorow, my friend and I decided to have Jewish night so we are making Kugle, knishes & potato Latkes and because we are both married to italians we are gonna make some arancinis. Next week we are starting Weight Watchers LOL

Points, how awesome is that for someone to pick up your tab! Your mom must be a little cutie!
Tina, go to that party! Free bologna sandwiches sounds like dinner....? lol

The mighty food gatherer brought home beef short ribs expecting me to work another miracle I guess. Got them in the oven at 4:30 and hoping they will be done and tender by 7. It might just turn out good, I've had the Food Gods smiling upon me lately. Two different leftovers were turned into different meals this last week that got gobbled up and were actually better than they were the first time around. :)

Cool Ang...I love it when the repurposed meal is better than the original. You deserve a pat on the back.

Laurie, I have a kugel recipe you would love....I have to look for it for you.

The kid looked really cute. I french braided her hair into two braids....cut up a some tiny silk/plastic daisies and wove them in the braid. Pale sparkly eyeshadow, Twiggy pale lipstick. I cut up a pair of jeans and quickly sewed in some big ol patches of paisley and flowered fabric to make them huge bell bottoms. We pulled out her embroidered ballet slippers (with mirrors yet), found some long strands of beads, tiny Yoko Ono glasses with green glass and topped it off with a strapless tank with and embroidered ribbon under the bust. Piece de resistance was the fringed vest out of Fred's closet. She kind of looked like Goldie Hawn from "Butterflies are free"

I couldn't find a mumu, and I'm not sure we are going to go. Everyone expects us to show up in costume. Fred expects to go. He can still fit in his tie dyes and jeans. I'm kind of bummed. Aw heck, he just came in all dressed up and asked me, "Aren't you ready yet?" No, honey.....I don't have anything to wear.

And TADAH!!! They loved the tuna loaf and creamed peas and onions.

Great shopping Donna, and I understand your math skills totally. Same kind of math I use to justify my grocery shopping too!!!

Good score on the meal, Points....a lovely random act of kindness....pay it forward, man.

Tina, that sounds like such fun dressing up your daughter. You should definitely GO! I demand IT! LOL I want pics and a report first thing tomorrow morning....

    Enjoy dinner out Otter!

I ran to the "Mexican store" (what I call it) earlier and got a plethora of good stuff! Enough to tide me over for a while - they're the only store around here that sells the Herdez Chile de Arbol, and their 5 Chiles salsas, also got some pasillas, I didn't know they were the same thing as Poblanos? I guess they are cuz I've seen 'em called both and they look identical. We are going to have a Mexican Fiesta tonight! I'm gonna make some empanadas which I've never done stuffed with corn, chiles, cheese, etc. and some spicy meat and rice stuffed pasillas with cheese of course all topped with pico de gallo and sour cream. MMMMMMMM I can't wait cuz it'll be fun. Listen to me? I need a life when cooking on a Saturday night is your idea of fun, you NEED A LIFE! - LOL Or I'm just old........

Ang, another thing I've never had, beef short ribs.....I'm beginning to feel like I haven't really experienced alot of things lately......I picked up a skirt steak this week and of course, I've never cooked one before but the price was right and I'm sure with the help of my friends, I'll come up with something to do with it.....Oh, and some bay scallops, don't know what to do with them, let alone how to cook them.....I'm on a learning curve with my cooking lately and I'm liking it..

Ended up doing french bread pizzas for supper....Knew this morning I had a pepper that needed to get used...Had to go to the grocery and saw a great loaf of french bread and voile...pizza.

Wynne, Didn't you watch Jeffrey Saad make those scallops?! Bobby Flay said "his presentation was flawless"! Get the pa hot, add the butter - get hot, dry your scallops really well and sear on high for about 3 minutes, turn over and (I believe he said turn off heat) and continue to cook till just done. (about 2 minutes) They looked delicious!

I guess I am a miracle worker! Beef short ribs came out nice and tender after being in the oven for 3 hours. We ate at 7:30 not 7. First time I've ever cooked them. Trying to get Steve to realize that just because it is red meat in a package does not mean you can throw it on the grill for 15 minutes and it will be done right. jeez, there is even a little sticker on the package that says 'great for grilling' or braising or whatever.

And get this, he has actually worked as a cook in restaurants. I think he does it on purpose.

Pan seared scallops have become one of my favorites. I thought I didn't like them because I had a platter at Red Lobster a few years back that had scallops on it. They were so chewy...like little rubber balls. Took me a long time to try them again. Joe's Crab Shack had breaded and deep fried ones that convinced me I do like them.

I make a recipe using the little bay scallops. Pat them bone dry. Dredge them in seasoned flour, dipped in beaten egg and then in bread crumb/parmesan (about equal) mixture and deep fry, three minutes tops. Awesome with Boom-boom sauce.
Freshly breaded makes all the difference.

Coquille St. Jacques is a classic French preparation with vermoth and a white sauce , run under the broiler to glaze the cheese on top. Also good.

And Wynne, I still have boxes in our garage labeled Fred's knickknacks that have not been opened in eleven years. He keeps everything. I even have a jar of rusted nuts and bolts from his father, that he had saved from his father. They have rusted together into a solid mass. It is now art....nothing functional about it. He still has leisure suits, real leisure suits.

Went to the party.....it was a blast. B (the owner) bought us dinner because I found her several new staff shirts from work and sent her all the info she needed for her
screenprinter. We got a bottle of zinfandel for daring to wear our costumes. My sister took pictures....I hope she will send them soon.

I'm stuffed. We ate at 3:30 before Livia went to work...and then went to the party at 8:30 and they bought us supper. Fred had the twin glazed jack and coke pork chops, I had a crab cake. Really good. Liv joined us after her shift and had some Mississippi mud pie. It was fun. There were afro's wigs, long hair wigs and tie dye everywhere. Way fun.
