Thanksgiving

    In Canada our thanksgiving is October 11. I always cook a very large turkey stuffed with dressing, leftover dressing that does not fit into the bird I bake. Please feel free to post recipes for leftovers. Our menu this year has already been decided on.....
    large roast turkey (hoping to find a 20 pounder) with a stuffing I got from a cousin who got it outta the tv guide in 1974
    mashed garlic, chive potatoes
    mashed honey pepper turnip
    broccoli and cauliflour with cheese sauce
    sauteed whole mushrooms
    homeade cranberry sauce with orange peel
    mixed salad greens with oil and vinegar dressing
    parmesean popovers
    gravy.
    soft rolls and butter...yes butter...not margarine
    Appetizers
    sweet and sour meatballs
    spinach and red pepper pita pizzas cut into small wedges
    cheese tray
    kolbossa, hot italian salami, and pancetta tray, with pate. crackers and pita wedges
    pickle tray
    homeade sausage rolls with chili sauce
    and of course......shrimp.....with the kids are a must
    desert
    homeade pumpkin Pie (I hope, usually bake my own own pumpin and puree, but have two guests from outta town staying, might have to use canned pure....playing it by ear)
    homeade whipped cream
    1 homeade apple crisp.......for those ummm different people who don't like pumpkin pie.

    K Hope you can see my problem...........alot of food gets eaten.......still have massive leftovers. One thing I learned.......pate goes sooo well with pasta!

    I wouldn't even stuff the turkey... it's too much trouble. What I do is cook the whole lot of stuffing either in a 7 qt crock pot or a 12 qt nesco roaster on low, for the entire roasting time of the bird. You can baste it occasionally to keep it from sticking or drying out.

    Are you making the dinner rolls from scratch? If not, get Sister Shubert's Parker House Rolls from the freezer section of the store.

    If you end up with too many left-overs (which I'm always happy with personally) and have a hard time trying to figure out what to do with them, just cut back on the size of turkey you get and cut out a couple of dishes. At Thanksgiving especially, I think our eyes are always a million times bigger than our stomachs! And you have a gorgeous menu there for the main entree but who could possibly eat all those appetizers first and then try and tackle that? And then dessert?
    Sending home left-over packages with dinner guests also helps. My favourite turkey dinner left-over is by far Hot Turkey sandwiches.
