Wednesday's White Stock

    Good Morning Everyone! I'd never heard the term "White Stock" before....The Encyclopedia of Food terms says "Any stock made from beef, veal, chicken, fish or vegetables, simmered in water with aromatic vegetables (typically onions, carrots and celery). Because the ingredients haven't been browned (as in a brown stock), the stock is pale in color." So now I know!
    I'm actually craving some soup today. Thinking of maybe making a batch of
    Polish Dill Pickle Soup
    I'm missing the fresh dill which is nice as a garnish but could be skipped in a pinch. :) It's ca, ca, ca cold here this morning. And depending on what thermometer or website or paper you read it's somewhere between -24C/-11F and -31C/-23F. A day to hunker down as it were.
    I plan on trying a new recipe for buns today that I saw on the Leite's Culinaria Facebook page. For dinner I'm leaning towards Porkchops with Sauerkraut and pearl barley.

    Shona, Glad you were able to pop by:) I like my mandolin slicer as well and it also has a really good guard. It would be scary working without one. I am pleased to hear you are starting to feel much better. Bummer being sick with the flu over Christmas:(

    My big excitement for the day is going out into the bitter cold and taking the taxi to the dentist to get my teeth cleaned. Then taking a taxi back home again after. I am just hoping it isn't slippery walking into the dentist's office. I am deathly afraid of falling at the moment and doing something to my chest. I can't wear a bra yet either (scary thought) so I will just wear a loose sweatshirt and jeans when I go out. Dinner might be pork tenderloin? Not sure yet?

    Pickles stick around here until I eat them or, if they are sweet gherkins, our daughter polishes off the jar. Wayne won't touch them. We have two itty bitty slices left of the Moonshine pickles and so far I haven't found them in stores and can't see ordering on line with the shipping charge being higher than the price of the pickles. AARGH!

    Two loads of laundry going. Kitchen counters found and cleaned. Roaster from the turkey we roasted the other day is on the couch so we will remember to put it away in the pantry / store room. I even swept the floors in LR and kitchen, and did a rudimentary dusting once over. Back hurting so I am taking a break.

    The washer hose sprang a leak (hot water not yet fixed - grumble grumble) but it appeared to be the connection to the faucet, so Wayne tightened that and we are crossing our fingers that was the entire cause.

    Probably turkey is on the lunch menu. I didn't eat breakfast so may nibble on a small slice sometime during the morning. Or PB something. Or not.

    Sunrise was gorgeous this morning. Brilliant reds and oranges! Of course neither of us had camera or cell phone handy so no pictures. Sigh. I did go thru my old laptop and deleted a bunch of the pictures on it. I mean, how many shots of deer in the dark do we need to keep?! Wayne has them on his computer so he can keep or delete. Haven't transferred them to the new one, probably will backup with a thumb drive just to be safe.

    Please do be careful Joce! I have these things that snap onto the bottom of my shoes called grippers, or ice grips. They are rubber things with little metal beads that allow you to grip on the ice. I wouldn't be able to walk the dogs down the trail or on slippery sidewalks without them! I hope you mend up and feel back to normal soon :)

    Hi Karen, wow moonshine pickles, never heard of them! There's a niche market to make and sell some moonshine pickles, lol ;) I occasionally can peaches with brandy, but not to much because my kids love the regular peaches so I have to be careful!

    Thinking of you Tina, sending you ((hugs)) You're in my thoughts and prayers.

    I bought a butchers pack of frozen meats, I took out the meatballs to make with spaghetti and sauce. Anyone cook frozen meatballs before? I usually make from fresh and not sure how to cook them, thaw them first or cook from frozen? We'll see, I might just simmer them in the sauce for an hour or so from frozen.....

    All the pics are from Google image Karen. :) The deer picture in my avatar was taken out my family room window a couple of days ago. There were 10 in the yard that day including two lovely big bucks with big racks. I got good pictures of the doe and young one munching on the cedars just outside the window, but the bucks were being elusive and stayed more within the woods. Sounds like you got a lot accomplished already today. Careful of your back! Ugh on the leak and nice on the sunrise! :)
    How are your temps Shona? I've used frozen cooked meatballs and just thrown them in soup and I've used thaw raw meatballs and thrown them in soup but I've never used frozen raw meatballs. I'd think it should work just fine if you threw them in with your sauce.
    Soup's started. There's just something so comforting about homemade soup on the oven.

    I'm with you Joce on loving the KA dough hook. I've used mine often and it's especially handy when a recipe calls to knead for 8 or more minutes! Do be careful today out on the icy sidewalks!

    Hi Karen! My daughter despises pickles. Once when she was little she ate so many she threw up and has hated them since then. She can smell them from across a room and will make a gagging face. Have never heard of Moonshine pickles!

    Shona, 3 appliances is a little much to die in such a short time! I have made homemade meatballs in big batches to freeze and I always defrost them first. I would think it should work the same way?

    About to eat some lunch I'm starving!! Think I'm going to make a batch of chicken stock and maybe give my hand a try at some Paleo bread. I found a promising recipe :) I may make a Paleo dessert as well, I'm in cooking mode today!! Like Shona I am making spaghetti and meatballs tonight. Will make zucchini noodles with my spiralizer :) Have a great day everyone!!

I bought them in S.C. and have no real plans to go back too soon. But if we do, I will buy a bunch of them and have enough to last.

    Janet, today is currently -6 with clear skies and sun, we're supposed to get up to plus 3 or 4 this afternoon. Last week we had about 4-5 days of -30 to -40 with the wind chill! Brrrr! The radio said we were having a bit of a pineapple express with the warmer temps. Hopefully the warmth makes over to you in the next couple days!

    Hi Michelle, do the kids eat the zucchini noodles too? I love zucchini and often slice it and put in my sauces and stews. I haven't attempted the noodles yet!

    Skippy got her stitches removed. Molly has an intestinal bug and she is on antibiotics. They follow me room to room bereft, Liv is back to work and the house just echoes.

    Have the “Chicken” stock simmering away. So as the stock started to heat up I thought it smelled funny, just different. I went and got a good whiff and realized I was making turkey stock lol! I had froze turkey bones 2 years ago and forgot, and that's what I happened to pull out! I thought what was in the bag looked like a lot haha! Okay New Year's resolution: Label stuff better.

    That's too bad Bri had an unfortunate pickle experience. I'm very impressed that she and Caiden like asparagus and brussel sprouts and I also like that you don't make them eat veggies that they don't like. I think that's what turned me into an anti-vegetable person. :)

    Gentle hugs Tina. Glad that you touched base. The music choices are lovely as is the food. Hope Molly feels better soon and that Skippy heals quickly.
    Time to put the buns in the oven. Soup was DELICIOUS! Great batch. Have prepped the sauerkraut and pearl barley. Jim's out shovelling the pond some more. He lit a fire for me before he went out and I'm snuggled in quite nicely. :)

    Michelle, my picky GS chows down on cooked broccoli like there is no more growing. I don't know about zucchini - would have to disguise it somehow. I don't cater to him, but usually manage to have something he will eat without having to "get after" him. Funny thing, he has some of the food likes / dislikes as his dad, who has not been around for 4 or 5 years. Must be genetic? I think Olive Garden has gone down hill - as has Cheddars. Cheaper ingredients to stay solvent? The staff has a different attitude at O.G. than before, still polite to customers but the tension / stress seems more evident. We found Nonna's in Springfield - nice place, good food, friendly wait staff - Italian food. But that is 100 miles away.

    I'm sure the meatballs will be fine, Shona. I usually cook them in the sauce anyhow. Would be nice if I had some for supper -- but have to go see what is there to go with turkey. Maybe rice or mashed potatoes.

    We're back from Chico,,Rick's dad is in the hospital, he has a problem with his left leg not healing properly..some sort of infection..he should be going home today and someone from his pain clinic will go by his home 3 times a week to change his bandage etc..it was either that or a nursing home, which we didn't want..then went to Costco..I forgot to buy pickles!

    Oh no, on turkey stock instead of chicken. I do love a turkey tortilla soup! I need to label better myself. Roasting beef bones for stock makes a huge difference!!

    LOL on the Italian food snobbery. I'm kind of wishing for lasagna and salad!

    I love pickles of any kind, I did make a pot of sauerkraut soup with our leftover kraut. It was good but we needed fred to slurp his soup to make it feel right.

    The new Italian resteraunt opened in town. Rachel's boyfriend got a job there. He is a sweet guy for just turning 17. His parents are divorced so he still has to do the every other weekend with his dad in another town about half hour away. Last weekend was dad's weekend but he was working so he told Rachel to come in at 2 for lunch with me so he could see her during his break. We went got salads and this eggplant thing that I didn't really care for and he ordered Rachel a special dessert nutella pizza. Pizza dough with Nutella and ricotta cheese in the brick oven and then more Nutella strawberries and whipped cream on top. Getting ready to leave he is going back to work and the waitress isn't coming over with the bill? He comes over. Oh I paid your bill your all set. Even tipped the waitress!
    Frank and I are going to go back and try one night. It has gotten rave reviews only opened since New Years. But the people in town loved the place that was there before and Frank and I didn't see it. Sauce was bland, food was just ok.
    Tonight's dinner is chicken fajitas and rice.
