Wildebeest Wednesday!!!!

    Good Morning Everyone! I slept a little bit better last night but could have done with one more hour. I know the next few nights are not going to be restful. Oh well, comes with the territory. A lot of people get butterflies in their stomach before a trip, well....I have Wildebeests! LOLOLOL!

    Haven't discussed dinner plans with Jim yet. We're planning on running some errands this afternoon and also going to a movie. I think we're going to see the one that won best picture this year "The Shape of Water".

    Wishing everyone a great day! Sunny and chilly here in Ottawa this morning. It was -10C/14F when I got up.

    I ended up making brownies yesterday, I had a very small slice and they were delicious :) The recipe though had times for cooking in an 8x8, 9x9, or 9x13 pan. I went with an 8x8 and it literally took 20 minutes at least over the cook time to get the middle done. So the edges were a little hard. Next time I'll go with a 9x13.

    The hash also turned out well. I got all the clove flavor off the meat (yay!) and dices up the meat really small and fried the heck out of it in the pan before adding the other ingredients. Took on the texture of crispy ham!!

    At the gym right now then I need to grab some things from the store. Tonight I'm going to make an Italian chicken pasta bake type dish. I'll post the recipe for it as well as the brownie recipe when I get home on my laptop. Have a great day everyone!!!

    I got King Arthur Flour's catalog in the mail yesterday and it noted that last Spring Madagascar had a really bad storm that devastated the small-scale vanilla farms which grow at 80% of the world's vanilla. Still doesn't explain why Mexico's vanilla is so high$$. Probably supply and demand. 4oz bottles of the good stuff are going for about $30. Yikes.

    Not sure about dinner yet but since I have a lot of lettuces here it should include a tossed salad.

    Morning Linda. Now Jim and I are re-thinking our plans to go to the movie. LOL. We'll see.

    Made a poached egg on a slice of English muffin bread/toast for brekkie and we actually went for a hot tub prior to breakfast. Might bring Jim back to that restaurant I was at yesterday for lunch later on and then I'm thawing some chicken drumsticks and will make Hot legs with carrot sticks and sliced red pepper on the side for dinner.

Lately, I have been trying to focus on something mundane like Mahjong and trying to remember what the playing pieces look like. When my mind wonders I quickly switch back to thinking about Mahjong and it seems to be working.
    I read that about the Vanilla, Linda and I hope it returns to a normal price soon. Gee, it really bugs me when a recipe takes much longer than the directions note, Michelle. Janet, pick yourself up some 5mg of Melatonin by Jameson. It will settle you down and help you sleep and maybe help you sleep on the plane as well.
    We are having Weiner Schnitzel tonight for dinner with creamy chive potatoes and steamed asparagus with hollandaise sauce.

    Decided to grill steak tonight. DH will get the lion's share and I'm happy with a few slices or will I'll use up my leftover salmon from the other night's dinner on top of a nice big tossed green salad with lots of stuff in it.

    I'm making some devilled ham and some egg salad :) sandwiches for the car trip tomorrow and bought a loaf of brown bread sliced horizontally so I can make pinwheels. :)

    Doing another whole chicken in the Instant Pot. It came out so well last time! Will have that with baked mac and cheese and a salad.

    It was a really nice day today, cool, temps low 70s(f), but too windy for a walk. The wind finally stopped but now I’m too full from dinner to go for one. I grilled DH a strip steak and steamed carrots and asparagus for a side. I made a tossed green salad for me with my left over salmon adobo and sautéed spinach, I added two slices of goat cheese too and cut up celery, carrot, radish, and olives. It was good.
    LD got a bath and I’m still deciding what to plant and where.

    I hope you are able to sleep tonight Janet. Pizza always sounds wonderful to me. Will you have access while away to drop n and share your adventures?

    I had some goat cheese leftover Linda so froze it. Never did that before but I think you mentioned I could do it so I'm giving it a whirl. Also keep meaning to tell you I recently bought the Beef Better than Bouillion. Haven't used it yet. Love the olive addition in your salad. You put lots of yummy stuff in there. I'm addicted to the internet and it's such a good way to keep in touch with home, so yes, I hope to be able to regularly pop in just like usual. Benjamin just uses his phone and a cell network so doesn't have internet at his apartment but he's going to make a hot spot for me. Not really clear what that is but as long as I can get on my computer I'll be a happy camper. :)

    Janet, we use a hot spot on my hubs phone when we go to St. Augustine, or travel anywhere else for that matter. He doesn't trust hotel internet as our entire business with our accounts and personal stuff is online and our home computers have the highest level of security. But the hot spot is safe and is only ours, not a local network like at the hotels. Not sure how it works but he wouldn't use it if it wasn't safe. Hubs is kind of a security guru, lol.

    Chicken came out fabulous as it did before! So a keeper!
