Thank you, Marie! After I saw Linda's nice review, I thought, I'm supposed to be doing something with the recipe now. What was it?? Oh yeah, add it to IMI! I'll get the hang of it yet! :)

Thanks, Marie. I too love eggplant but not the oil. I think that this method would also work without the breading, I'll try that next time.

I have had frybread tacos and I found them to be very good, also I think they had a version of these called Indian Tacos. Thanks for sharing the recipe.
My Mother made fried cornbread and to this day when I eat pinto beans I think of her fried cornbread, I have never been able to duplicate her method or the taste of her fried cornbread, it was always nicely browned. She either left something out or put more of something in it.
I first ate Indian Tacos in an Oklahoma Town , they were selling them in a Casino. I cant recall the name of the place, but it was North of I 40 above Henryetta, Ok., maybe Okmulgee.

Finally got around to making up a batch of this last week. LOVE it and it will become a staple in our spice cupboard. The smoked paprika is wonderful in this! Kudos to Rick on a great recipe! More in IMI
