@hexxorba - I don't know but its worth a shot. The juice itself is enough to preserve the fruit I bet (like veggie confit) but I'm sure the sugar and salt help as a preservat

I love this idea..I have made garlic oil etc but not with spices. TY for post!

I just noticed I never mentioned the source for this recipe. Alton Brown did a great show on carrots that this came from. I hope you do make it - its sooooo good.
